Chocolate Ice Cream recipe

🍫 Ingredients:

* 2 cups heavy cream (cold)
* 1 cup condensed milk
* ½ cup cocoa powder (unsweetened)
* 100 g dark chocolate (melted & cooled)
* 1 tsp vanilla extract
* Pinch of salt



🍨 Steps (No Machine Method):

1. Beat cold heavy cream until soft peaks form (light and fluffy).

2. In another bowl, mix condensed milk, cocoa powder, melted chocolate, vanilla, and salt until smooth.

3. Fold the whipped cream into the chocolate mixture slowly. Don’t overmix—keep it airy.

4. Pour into an airtight container and smooth the top.

5. Freeze for 6–8 hours or overnight until firm.

🧾 Ingredients (1 glass)

* Fresh mint leaves – 8–10
* Lemon (or lime) wedges – 4–5
* Sugar – 2 tsp (or simple syrup)
* Salt – a pinch (optional, Indian style)
* Ice cubes – as needed
* Soda / sparkling water – 1 cup
* Lemon slices – for garnish



👩‍🍳 Steps

1. In a glass, add mint leaves + lemon wedges + sugar
2. Gently muddle (crush) to release mint flavor and lemon juice
3. Add a pinch of salt (optional but tasty)
4. Fill the glass with ice cubes
5. Pour chilled soda on top
6. Stir lightly
7. Garnish with mint + lemon slice

Paneer Jalebi Recipe

Ingredients:———-
• 1 cup fresh paneer (crumbled)
• 2 tbsp maida (all-purpose flour)
• 1 tbsp cornflour
• ½ tsp baking powder
• 2–3 tbsp curd (as needed)
• 1 pinch orange food color (optional)
• Oil or ghee for frying

For Sugar Syrup:
• 1 cup sugar
• ½ cup water
• 3–4 green cardamom (crushed)
• Few saffron strands
• ½ tsp lemon juice



Steps :————-

1️⃣ Prepare Sugar Syrup
1. In a pan, add sugar and water.
2. Boil until slightly sticky (1-string consistency).
3. Add cardamom, saffron, and lemon juice.
4. Keep syrup warm (not cold).

2️⃣ Make Batter
1. Blend crumbled paneer until smooth.
2. Add maida, cornflour, baking powder, curd, and food color.
3. Mix to make a smooth, thick batter (like piping consistency).
4. Rest for 10–15 minutes.

3️⃣ Fry Jalebi
1. Heat oil/ghee on medium-low flame.
2. Fill batter in a piping bag or squeeze bottle.
3. Pipe spiral shapes directly into oil.
4. Fry on low flame until golden and crisp.

4️⃣ Soak
1. Immediately dip hot jalebis into warm sugar syrup.
2. Soak for 1–2 minutes.
3. Remove and serve warm.



✨ Tip: Fry on low heat for soft inside and crispy outside texture.

Holi Special Mawa Gujiya Recipe

Ingredients :—

For the dough
• 2 cups all-purpose flour (maida)
• 4 tbsp ghee (clarified butter)
• ½ cup water (approx., to knead)
• Pinch of salt (optional)

For the filling
• 1 cup mawa (khoya), grated or crumbled
• ¾ cup powdered sugar
• 2–3 tbsp chopped almonds
• 2–3 tbsp chopped cashews
• 2 tbsp raisins
• ½ tsp cardamom powder
• 2 tbsp desiccated coconut (optional)

For frying
• Ghee or oil (for deep frying)



Steps :—

1. Make dough: Mix maida and ghee, rub well. Add water and knead into a firm dough. Rest 20 min.
2. Prepare filling: Lightly roast mawa, cool, then mix sugar, chopped nuts, raisins, and cardamom.
3. Roll & fill: Roll small discs, add 1–2 tbsp filling, fold into half-moon, seal edges.
4. Fry: Deep fry on medium-low heat until golden and crisp.
5. Cool & serve: Optional—dip in sugar syrup for extra sweetness.



Optional sugar syrup coating (for sweeter version)
•Make syrup with 1 cup sugar + ½ cup water, boil to 1-string consistency.
•Dip fried gujiyas briefly and let dry.

Angoori Rasmalai (Soft Mini Rasmalai Recipe)

Ingredients————

For Angoori (Mini Chenna Balls)
• 1 liter full-fat milk
• 2 tbsp lemon juice or vinegar
• 1 tsp cornflour (optional, for extra softness)

For Sugar Syrup
• 1 cup sugar
• 4 cups water
• 2–3 cardamom pods

For Ras (Flavored Milk)
• 1 liter full-fat milk
• ½ cup sugar (adjust to taste)
• 10–12 saffron strands
• ¼ tsp cardamom powder
• 2 tbsp chopped pistachios
• 2 tbsp chopped almonds



Method ———-

1. Make Chenna
1. Boil milk, switch off heat, add lemon juice/vinegar.
2. When milk curdles, strain through muslin cloth.
3. Rinse with cold water to remove sourness.
4. Hang for 30–40 minutes (chenna should be soft, not dry).

2. Knead & Shape
1. Knead chenna till smooth (8–10 minutes).
2. Add cornflour, knead again.
3. Make small marble-size balls (they will expand).

3. Cook Angoori
1. Boil sugar, water & cardamom.
2. Add balls, cover and cook on medium for 12–15 minutes.
3. Switch off heat, let them cool completely.
4. Gently squeeze excess syrup.

4. Prepare Ras
1. Boil milk till slightly thick.
2. Add sugar, saffron & cardamom powder.
3. Cool completely, then add nuts.

5. Assemble
1. Add cooked angoori into chilled ras.
2. Refrigerate for 4–5 hours.
3. Garnish with pistachios & saffron.

Classic bakery-style Nankhatai recipe

Ingredients—-

• All-purpose flour (Maida) – ½ cup
• Gram flour (Besan) – ½ cup
• Semolina (Sooji/Rava) – 2 tbsp
• Powdered sugar – ½ cup
• Ghee – ½ cup (semi-solid)
• Baking soda – ¼ tsp
• Cardamom powder – ½ tsp
• Chopped pistachios & almonds – 2 tbsp (for topping)
• Milk – 1–2 tsp (only if needed)

—————-

Steps —-

1. Preheat oven to 170°C (340°F) for 10 minutes.
2. In a bowl, cream ghee and powdered sugar until light and fluffy.
3. Add cardamom powder and mix.
4. In another bowl, mix maida, besan, sooji & baking soda.
5. Add dry ingredients to the ghee mixture.
6. Mix gently to form a soft dough (do not knead).
• Add a few drops of milk only if the dough feels dry.
7. Make small balls, slightly flatten them.
8. Place on a lined baking tray, leaving space between cookies.
9. Add nuts on top, press lightly.
10. Bake for 14–16 minutes until the bottom turns light golden.
11. Cool completely – they will become perfectly crumbly.
