Marshmallow Chocolate Poke Cake 🍫☁️

Ingredients:
For the cake
• 1 (15.25 oz) box Devil’s Food chocolate cake mix
• Ingredients listed on the cake mix box (usually eggs, oil, and water)
For the chocolate filling
• 1 (14 oz) can sweetened condensed milk
• 12 oz semi-sweet chocolate chips (340 g)
• 1/3 cup heavy cream (80 ml)
For the marshmallow whipped topping
• 1 1/2 cups heavy cream (360 ml)
• 1/3 cup powdered sugar (40 g)
• 1 teaspoon vanilla extract
• 7 oz marshmallow fluff (about 2 cups / 200 g)
For the chocolate ganache swirls
• 1/2 cup chocolate chips (85 g)
• 3 tablespoons heavy cream (45 ml)
How to make it:
Preheat your oven according to the cake mix instructions. Prepare a 9×13 inch baking pan and bake the chocolate cake according to the box directions.
While the cake is still warm, use the handle of a wooden spoon to poke holes all over the cake. Make plenty of holes so the filling can soak deep into the cake.
In a microwave-safe bowl, combine the sweetened condensed milk, 12 oz chocolate chips, and 1/3 cup heavy cream. Microwave for 30–60 seconds, stirring until smooth and glossy.
Pour the warm chocolate mixture slowly over the cake, letting it fill the holes. Spread any remaining chocolate across the surface. Let the cake cool for about 1 hour, then refrigerate until fully chilled.
To make the marshmallow whipped cream, whip the heavy cream until it begins to thicken. Add powdered sugar and vanilla, then continue whipping until stiff peaks form.
Gently fold in the marshmallow fluff until smooth and fluffy. Spread the marshmallow topping evenly over the chilled cake.
For the ganache, melt the remaining 1/2 cup chocolate chips with 3 tablespoons heavy cream until smooth. Transfer to a zip-top bag and snip the corner.
Pipe the chocolate ganache over the top of the cake, then use a toothpick or skewer to swirl it into beautiful marble patterns.
Chill for at least 30 minutes before slicing so the Marshmallow Chocolate Poke Cake sets perfectly.

Broccoli Cheese Casserole: Creamy, Cheesy Comfort Classic!

Ingredients:
2 large broccoli crowns
1 tbsp salt (for blanching)
2 cups cooked rice
2 tbsp butter
1/2 cup diced onions
4 cloves garlic, minced
1 can cream of chicken & mushroom
1 can cheddar cheese soup
1 cup heavy cream
1 cup Monterey Jack cheese
1 cup sharp cheddar cheese
1 tsp paprika
1 tsp garlic powder
1/2 tsp black pepper
Extra cheese for topping
Bread crumbs (optional)
Directions:
Preheat oven to 375°F (190°C).
Cut broccoli into florets and blanch in salted boiling water for 2–3 minutes, then drain.
In a pan, melt butter and sauté onions until soft, then add garlic and cook until fragrant.
Stir in cream of chicken & mushroom soup, cheddar cheese soup, heavy cream, and seasonings. Mix until smooth.
Add cooked rice, broccoli, and shredded cheeses. Stir until everything is well combined.
Transfer to a greased baking dish, top with extra cheese and breadcrumbs if using.
Bake for 25–30 minutes until bubbly and golden on top.

Chile Rellenos Casserole
This dish brings all the magic of chile rellenos into an easy, baked version—roasted poblanos, melty cheese, and a fluffy, savory egg layer. It’s comforting, cheesy, and perfect for feeding a crowd without the fuss of frying.
Every bite is smoky, creamy, and packed with that classic roasted chile flavor that makes this dish unforgettable.
Ingredients
6–8 large poblano peppers
2 cups Monterey Jack cheese, shredded and divided
1 cup cheddar cheese, shredded and divided
5 large eggs
1½ cups whole milk
3 tablespoons all-purpose flour
1 teaspoon baking powder
¼ teaspoon onion powder
¼ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon black pepper
Sour cream, salsa, and chopped cilantro for serving (optional)
Instructions
Preheat your broiler and position the rack about 6 inches from the heat. Line a baking sheet with foil and place the poblano peppers on it. Roast for 10–15 minutes, turning occasionally, until the skins are blistered and charred.
Transfer the peppers to a covered bowl or bag and let them steam for 10 minutes. Peel off the skins, remove stems and seeds, and set aside.
Preheat the oven to 350°F and lightly grease a 3-quart baking dish.
Lay half of the roasted peppers in an even layer in the dish. Sprinkle with 1 cup Monterey Jack and ½ cup cheddar cheese.
Repeat with the remaining peppers and cheese.
In a bowl, whisk together eggs, milk, flour, baking powder, onion powder, garlic powder, salt, and pepper until smooth.
Pour the egg mixture evenly over the layered peppers and cheese.
Bake for about 45 minutes, until the top is golden and the center is set.
Let it rest for 5–10 minutes before slicing. Serve with sour cream, salsa, and fresh cilantro if desired. See less
