Spicy Omelette

Our Spicy Omelette was prepared with our Pride of India Chilli Powder, Garlic & Herb and Garlic Flakes.

Serves 4.


INGREDIENTS:
3 tbsp oil

2 small onions, sliced

250g mushrooms, sliced

1 red bell pepper, sliced

2 green chillies, sliced

1 tsp Pride of India Chilli Powder

½ tsp Pride of India Garlic & Herb

1 tsp Pride of India Garlic Flakes, rehydrated

½ cup cheese, grated

8 eggs, scrambled

salt, to taste

coriander, to garnish

METHOD:
Heat oil in a medium pot.

Sauté onions and mushrooms for 5 minutes on medium heat.

Add red bell pepper, chillies and Pride of India Garlic Flakes.

Add Pride of India Chilli Powder and Garlic & Herb. Mix well.

Sauté for another 10 minutes or until all the vegetables are cooked.

Add eggs and grated cheese to the cooked vegetables.

Add salt to taste.

Sprinkle a little Pride of India Chilli Powder and Garlic & Herb over the eggs.

Cover the pan with a lid.

Cook on low heat until the eggs are well done.

Garnish with coriander.

Samp & Beans with Mutton

Comfort Food is Homemade Happiness and Good Memories.

Our spicy and aromatic Curried Samp and Beans with Mutton was prepared with our Pride of India
Samp and Sugar Beans (Red Speckled Beans) and Spices: Durban Oriental Mix Masala, Star Anise, Bay Leaves and Fennel (Soomph) Seeds.

Serves 4 – 6.

INGREDIENTS:
· 5 tbsp oil
· 1 onion, finely sliced
· 3 Pride of India Star Anise
· 3 Pride of India Bay Leaves
· 1 tsp Pride of India Fennel (Soomph) Seeds
· 7 tsp Pride of India Durban Oriental Mix Masala
· 2 tsp ginger & garlic paste
· 2 tomatoes, chopped/pureed
· 1kg mutton, bone-in & cut into pieces
· 250g Pride of India Samp, boiled
· 150g Pride of India Sugar Beans, boiled
· fresh coriander leaves, for garnishing
· salt
· water

METHOD:
Soak Pride of India Samp and Sugar Beans separately overnight or for a few hours. Add water to cover and boil until tender.

Heat oil in a medium pot. Add Pride of India Star Anise, Bay Leaves & Fennel (Soomph) Seeds. Fry for 30 seconds.

Add onion and sauté until golden brown.

Add Pride of India Durban Oriental Mix Masala and ginger & garlic paste. Mix and fry for approximately 1 minute. Add a little water, if necessary.

Add tomatoes and cook for 2 minutes. Add mutton and cook for approximately 10 minutes.

Season with salt. Add 2 cups of water. Let the mutton cook for another 30 - 40minutes or until the meat is almost cooked.

Add the boiled Pride of India Samp and Sugar Beans. Mix well and cook for a further 8-10 minutes. Add extra water, if necessary.

Cook until the curry reaches a desired consistency and the mutton is fully cooked.

Once ready, garnish with fresh coriander leaves.

NOTES:
You can substitute mutton with other types of red meat such as lamb or beef.

Cooking times will vary depending on the type of meat used.

Yellow Split Pea Soup (Dhall)

It is healthy comfort food and a great source of protein.

It is a dish made with split peas and cooked with onions, tomatoes, spices, etc.

Our dish was prepared with our Pride of India Yellow Split Peas (Yellow Pea Dhall) and our Pride of India Spices.

Ideal for a plant-based, meat-free or vegan diet.

Curried Split Chickpeas (Chana Dhall)

This dish was prepared using our Pride of India Split Chickpeas (Chana Dhall) and Pride of India Spices:
Ginger & Garlic Masala and Garum Masala.

Ideal for a meat-free, plant-based or vegan diet.

Serves 4.

INGREDIENTS:
3 tbsp oil

1 onion, finely sliced

3 tsp Pride of India Ginger & Garlic Masala

½ tsp Pride of India Garum Masala

250g Pride of India Split Chickpeas (Chana Dhall), boiled

1 tomato, grated/blended

spring onions, for garnishing

salt

water

METHOD:
Soak Pride of India Split Chickpeas (Chana Dhall) overnight or for a few hours. Add water to cover and boil until tender.

Heat oil in a pot. Sauté onion until golden brown.

Add Pride of India Ginger & Garlic Masala and fry for approximately 1 minute. Add a little water, if necessary.

Add tomato and cook until soft.

Add the boiled Pride of India Split Chickpeas (Chana Dhall) and cook for approximately 10 minutes. Add a little salt to taste.

Add Pride of India Garum Masala.

Cook until the water has reduced and you achieved your desired consistency.

Garnish with spring onions.

Serve with rice (basmati, brown, jasmine or cauliflower rice) or your choice of flatbread (roti, paratha, naan or puri).

Chicken Stew

Chicken Stew is heart-warming comfort food. This dish is full of aromatic spices and seasonings prepared with Pride of India Spices.

Serves 4.

INGREDIENTS:
1kg chicken pieces, bone-in & cut into pieces

3 – 4 cups of fresh vegetables of your choice

2 medium potatoes, quartered and washed

2 tsp Pride of India Chicken Spice

2 tsp Pride of India Garlic & Herb

2 tsp Pride of India Garlic Flakes, rehydrated in water

2 tsp Pride of India Lemon Pepper

1 chicken stock cube, soaked in 1 cup of warm water, stir until dissolved

1 tbsp flour of your choice

2 tbsp oil

1 onion, finely sliced

salt, to taste

boiled water

METHOD:
Heat oil in a medium pot. Sauté onion until golden brown.

Add Pride of India Chicken Spice and Lemon Pepper & fry for approximately 30 to 60 seconds. Add a little water, if necessary.

Add chicken, potatoes, Pride of India Garlic & Herb and Garlic Flakes.

Add flour and chicken stock.

Add boiled water until covered. Mix well.

Cook until the chicken and potatoes are halfway cooked.

Add the fresh vegetables and mix well.
Add salt to taste.

Cook until the chicken and vegetables are tender, the potatoes are soft and the broth has achieved a desired consistency.

Serve with crusty garlic and herb bread.
