Garam Masala Recipe:
Cinnamon-1/4 cup
Cardamom-2 tablespoons
Cloves-2 tbsp
Bay leaf-10/12 o'clock
Nutmeg-1
Javtri-4/5 petals
Cumin - 1/4 cup
Coriander-1/4 cup
Star anise-1 (Its flavor is very strong so don't give too much)
Shahi Jeera-2 tbsp
Black pepper -1+1/2 tbsp

blend it.
Grind and store in a glass jar.

10/12 dry chillies can be added along with all these spices if desired.

You can make any recipe of chicken, beef or mutton with this spice.

You can Cooking Biryani or Tehari with this spice.

1tbs of spices is enough for one kilogram of meat.

🥦 Cauliflower Pakora 🥦

Ingredients:
★1 Medium cauliflower
★Rice powder 1 cup
★Flour 1/4 cup
★Tempura flower 1 handful
★Baking powder 1/2 tsp
★Ginger, garlic paste 1 teaspoon
★Chopped coriander leaves 1/4 cup
★Cumin powder 1 tsp
★Chilli powder 1 teaspoon
★Garam masala powder 1 tsp
★Chilli powder to taste
★Salt to taste
★Oil for frying

Ready method

1. Steam the cauliflower into small pieces and drain the water.
2. Make a thick batter by mixing all the batter ingredients together with sufficient water.
3. Heat oil on medium flame and fry one by one in floret batter and fry in oil.
4. When the color is golden, drain the oil and place it on a paper towel to absorb the excess oil.
5. Serve with sauce.

Recipe - chana dal Halwa

Materials –
Chana dal - 1 cup
Cow's milk- 1 cup
Red sugar-1 cup or more or less according to taste.
Salt-1 pinch
Pure ghee ½ cup + 1 tbsp
Cardamom powder - 1/4 tsp
Cinnamon - 2 pieces
Bay leaves - 1 t
Cardamom - 1 tsp
Crushed almonds - 2 tbsp
Raisins - 1 tbsp
Cashew nut batter - 2 tbsp
Mawa - 1/4 cup (optional)

Method of preparation:

First, wash the dal and soak it for 1 hour. After that, boil the dal with enough water/liquid milk and do not dry the water. Cow's milk does not contain a little water. Now add a little milk to the boiled dal and blend it.
Now heat pure ghee in a non-stick frying pan and add cardamom, cinnamon and bay leaf one by one. Now add the mixture of dal and cow's milk. Stir frequently to prevent burning. Keep the heat of the oven medium. Then stir in red sugar & almond batter, a pinch of salt. Add crushed almonds and raisins and cardamom powder. Stir and stir at one point when the halwa thickens and comes out of the pan, stir it for 1 minute with a whisk and do not take it off the stove. There is little ghee on the plate or tray on which the halwa will be poured. Now pour the halwa on the plate and spread it evenly and cut it into desired size. Garnished with chopped almonds and raisins and served hot, delicious chana dal special halwa.

Some tips for the kitchen

✔️Cook the daal for longer it will increase the taste of dal.

✔️To remove the smell of fish, rub fish with turmeric and vinegar/lemon juice and wash it after 15 minutes.

✔️Red mustard has more rust. Yellow mustard is bitter when used. If you blend salt and green chili with mustard it will not bitterness.

✔️Most of the time Salt melts during monsoons, so tie a handful of clean rice and keep it in a salt container.

✔️When you take something hot in a glass, it often breaks, so before pouring something hot, put a metal spoon in the glass it prevent the glass from breaking.

✔️Potatoes and ginger remain fresh for many days if kept in sand.

✔️If you keep any food in the refrigerator, it is better to keep it with a lid. As a result, the smell of one food does not transfer to another and the refrigerator does not smell.

✔️Before placing the biscuit in the glass or cup, if you leave a little sugar or a piece of thick paper, the biscuit stays soft for a long time. #

Some tips to double taste of cooking khichuri!

Before cooking the roasted khichuri, wash the khichuri rice well and soak it in water for 10 minutes, then drain the water well and cook.

When the water is reduced by half while cooking the roasted khichuri, adding a little bit ghee will give it a better aroma.

Soak the khichuri dal in water before cooking it will cook the dal along with the rice quickly.

If you want to cook khichuri with moong dal, brown the dal and take it. Moong dal takes more time to boil than rice, so after taking the dal, soak it in water for half an hour and if that is not possible, boil it separately with little salt and water and mix it with rice to cook khichuri.

After the khichuri rice is cooked, it is better to stir it so that the khichuri grains do not break.

The perfect amount of salt while cooking khichuri is if the rice and dal is half kg then add 2 teaspoons of salt.

If cooking khichuri in a steel/aluminum thin bottomed pan then as soon as the water reduces to half during cooking, place an old iron pan on the stove and place the khichuri pan on it and cook on low heat.
