1 cup corn
1 cup chopped lettuce
½ avocado (cubed)
200g salmon (cubed)
¼ cup multicolored cherry tomatoes
1 cup boiled potatoes (cubed)
A pinch of fresh coriander (cilantro)
🧂 Seasoning (for Salmon, Potatoes & Corn):
Cajun seasoning
Olive oil
Salt and black pepper
1 tsp honey (for the salmon marinade)
🥣 Creamy Dressing:
1 cup Greek yogurt
1 tsp mustard
1 tsp常 thyme / oregano
1 tsp dill (dried or fresh)
A pinch of salt
1 tsp pesto sauce
🎬 Method:
1. Crispy Corn: On a baking sheet lined with parchment paper, spread the corn. Drizzle with olive oil, salt, pepper, and Cajun seasoning. Roast in the oven or air fryer until golden and crispy.
2. Salmon & Potatoes: Marinate the salmon cubes with olive oil, Cajun seasoning, salt, pepper, and honey. On the same sheet with the boiled potatoes, toss them with Cajun seasoning and olive oil. Bake until the salmon is perfectly cooked and the potatoes are crispy.
3. The Magic Dressing: In a small bowl, combine Greek yogurt, mustard, pesto, thyme, dill, and salt. Whisk well until completely smooth and creamy.
4. Assembling the Salad Bowl: In a large transparent serving bowl, spread the chopped lettuce as a base, followed by the cubed avocado. Arrange the remaining ingredients beautifully side-by-side: roasted corn, crispy potatoes, salmon cubes, and multicolored cherry tomatoes. Drizzle the creamy dressing right on top, garnish with fresh coriander, and serve!
