π₯ INGREDIENTS
2 ripe plantains
1 chicken breast (cut into large chunks)
Β½ tsp black pepper
Salt (to taste)
1 tsp garlic & ginger powder
1 tsp paprika
1 tsp oregano
1 tsp curry powder
1 seasoning cube (Maggi or Knorr)
1 tbsp blended garlic
1 tbsp grated or dry onion
1 tbsp fresh blended pepper
Red, yellow, and green bell peppers (Β½ each)
1 tomato (seeds removed, sliced round)
1 cucumber (thinly peeled or sliced flat)
2 tbsp vegetable oil
Sesame seeds (for garnish)

1. Prep the Plantains:
Peel and cut the plantains into small chunks. Season with black pepper and salt. Mix well, cover, and let it sit for 10 minutes.
2. Marinate the Chicken:
Cut chicken breast into large chunks. In a bowl, add blended pepper, garlic, onion, paprika, curry, oregano, ginger powder, salt, and seasoning cube. Mix well and allow to marinate for 30β60 minutes.
3. Prepare Veggies:
Slice bell peppers into large pieces. Slice tomato into round circles and cucumber into thin flat pieces.
4. Cook the Chicken:
In a pan, drizzle a bit of oil. Cook chicken on low heat for 10β15 minutes per side until golden and tender. Set aside.
5. Fry or Bake Plantains:
Fry plantains until golden, or bake/air-fry for a healthier version.
6. Assemble the Skewers:
Using barbecue sticks, layer the chicken, plantain, and bell peppers alternately.
7. Prepare the Pepper Sauce:
In a pan, add a little oil, garlic-ginger paste, and fresh blended pepper. Stir for 5 minutes on low heat. You can add some leftover stew if you have.
8. Coat the Skewers:
Add the skewers into the sauce, mix gently until coated with spicy flavor.
9. Garnish & Serve:
Plate beautifully, sprinkle sesame seeds, and decorate with tomato and cucumber slices.
