I baked this loaf cake quickly before leaving for Poland.
No time for videos, but it turned out too good not to share.

I wanted to leave something sweet for my boyfriend’s morning coffee.
When I came back, there was still a big slice left…
I might have exaggerated with the quantities, but it stayed perfectly soft.

He said it’s his favourite loaf cake so far.
Probably the chocolate glaze helped.

Soft chocolate chip loaf cake
with chocolate glaze & coconut

3 eggs, room temperature
150g brown sugar (about ¾ cup)
100 ml vegetable oil (⅓ cup oil)
120 ml milk or plant milk (½ cup)
250 g all-purpose flour (about 2 cups)
16 g baking powder (about 4 tsp)
1 pinch of salt
1 tsp vanilla extract
120 g dark chocolate chips or chunks (about ¾ cup)

How to:

Whip the eggs and sugar until pale and fluffy.
Slowly add the oil, vanilla and milk.
Fold in the flour, baking powder, and salt.

Fold the chocolate chips into the batter.

Bake at 170°C / 340°F, static oven,
for 45–50 minutes, until just set.

Let the cake cool completely.

Chocolate glaze

120 g dark chocolate (about 4 oz)
1 tbsp coconut oil
2 tbsp milk or plant milk

Melt everything together, pour over the loaf,
and finish with shredded coconut.

I love every season - each one has its place in nature.
But spring and summer have a special place in my heart.

There’s something about the light coming back.
Cats stretching in the sun, rolling on the balcony,
or lying on the kitchen counter
(they weren’t allowed at first, they won).

Nature slowly waking up.
Houseplants pushing out new leaves.
The balcony garden filling up with tomatoes, strawberries, herbs.
And cooking changing too - lighter, fresher, made with what’s growing just outside.

This year feels like a year of changes at home.
Adding more fruit and vegetables to the balcony garden.
Finally setting up the living room and my little workspace.
Creating a coffee and tea corner in the kitchen.
And giving the cats more vertical space to explore.

There are many ideas for this year,
for this home and for this channel.
For now, I’m planning quietly
and drinking a cup of warm tea.

Just a few things I found over the past few days.
Small pieces of family history.

Children’s books my grandma used to read…first to my mom, and later to me.
Those books will soon fill my own bookshelf.

Objects I grew up with, and others I’m only discovering now.
Fabrics my grandma once chose …waiting to be sewn into something new, with my own hands.

Plates and tiny vodka glasses I still remember from family gatherings…
I can’t wait to use them one day to plate my recipes.

The only things I brought back with me for now are two photos of my grandparents in Iraq
my grandpa almost looks like a local there 😄
He had been sent there for a work project with his company; he was a professional welder, my mom told me.

Tried my mom’s wedding dress for the first time and realized it actually fits me.

I’ll find a way to bring everything home, to place two homes under the same roof.

I know some people don’t like old objects, and I understand that.
For me, though, they’re a way of keeping my grandparents close.
Of carrying their story forward.

These are just a few of the hundreds , maybe thousands, of family photos I went through today.

Sitting in my grandparents’ home, where they’re no longer here.
It’s the first time since they passed that I’ve had the chance to go through these pictures and the things they left behind.

Some objects instantly brought me back to my childhood - like the dream interpretation book my grandma used to read to me whenever I had a dream, or the horoscope books she truly believed in.
Others I’m only discovering now, like amber necklaces she owned and cookbooks I didn’t even know she had.
Realizing how much we actually had in common.

As for my grandpa - I was telling my mom today - when he grew that huge beard, he didn’t even look Polish anymore.

It’s true what they say about enjoying people while they’re still here.

I’ll keep going through these things. Let’s see what I’ll find.

And even if this content is different from what I usually share - this, too, is home to me.

My very last tomatoes finally ripened.
I picked them before the first frost and kept them in a paper bag.

Not perfect, not many,
just enough to slow down and use them properly.

I turned them into oven-roasted tomatoes,
the kind that works on everything and keeps well in the fridge for a few days.
We’ll have them later on a bruschetta.

Ingredients:
Tomatoes, olive oil, garlic, oregano, salt, and a little brown sugar.

Bake:
2 hours at 170°C / 340°F.

Save this for when you have a handful of tomatoes to use up.
They’re worth it.

A simple, very cheesy onion soup for cold days.

It’s been freezing lately where I live,
so this felt like the right thing to cook.

Uncomplicated, made with simple ingredients,
and meant to be eaten hot.

You’ll need:

1 kg onions (about 2.2 lb)
1.2 L vegetable broth (5 cups)
Butter or olive oil
2 Tbsp apple cider vinegar
Bay leaf and/or thyme
A pinch of salt & black pepper
A good melting cheese on top (about 120 g / 4 oz)

Cook the onions slowly until soft and lightly golden.
Add the broth and herbs, simmer gently, then add the vinegar at the very end.
Serve hot with cheese on top.

Save this for a cold evening
and tag someone who loves onions 🧅

Taking your time is not a delay.
It’s part of building something that truly matters and feels like yours.

It takes trial and error, changing your mind, moving stuff around,
and living for a while with things that don’t quite make sense yet.

This is the journey of my home office corner, which even changed rooms along the way.

For months, this corner of my home was left unfinished.
Almost a storage space, full of boxes and things waiting for a place.

Now I’m preparing it for spring.
I have many projects I want to work on, and I need a space that supports me - not one that drains me.
Something calm, light, and balanced.

Because when the space around you is intentional (even a little messy, but with a reason)
your mind has room to breathe and create.
