01- Myojin × Hatsukokoro Shirasagi Ginsan Kasumi Yanagiba 210mm
Hand-forged by Toru Tamura and traditionally sharpened by Tateo Myojin, the Shirasagi (白鷺, Egret) is a beautifully refined single-bevel Yanagiba. Its Ginsan core combines stainless-steel convenience with excellent sharpness and edge retention, while the elegant Kasumi finish reflects the clean, understated beauty of the Shirasagi line.
02- Hatsukokoro Ginrei Ginsan Nashiji Gyuto 210mm
The Ginrei (銀嶺, Silver Peak) combines traditional Sakai craftsmanship with a highly refined everyday geometry. Its Nashiji (pear-skin) finish,gives the blade its understated, rustic character, while the 210mm Gyuto profile is particularly well suited to rocking cuts and everyday kitchen work.
