I used cream and a bit of milk + added some tinned corn 👌🏻

Sweet and sour pork

This is hands down my go to order when ordering Chinese.
And this recipe absolutely hit the spot 👏👌🏻

I used a pork loin fillet and subbed green onion for green capsicum.

I wouldn't cook at dinner time if you are already in a hightened state 😅 as there are a few elements including frying pork on the stove (while rice cooks in TM)

But if you also love a good S&S add this one to your list!

And in the morning, I am not making waffles...
We have to be out of the house early again tomorrow (crime on a sunday)
So I've made a fresh batch of waffles tonight ready to pop some in the toaster in the morning and then put the rest in the freezer!

My kids love this gingerbread waffle maker we got from kmart last Christmas, I often make our pancakes in this too 😅

Pickled eggs 🥚

Ingredients
• 1 dozen hard-boiled eggs
• 1.5 cups of white vinegar
• 1.5 cups of water
• 1 tablespoon pickling spice
• 1 Bay leaf
• 2 garlic cloves chopped/sliced
• 1 tablespoon sugar
• 1 chopped chilli (optional)

Method
• Boil and shell 1 dozen hard-boiled eggs
• In a small saucepan, add all remaining ingredients and bring to the boil, let simmer for 1-2 minutes
• Remove from heat and allow to cool slightly before pouring over eggs
• Seal the jar and pop into the fridge for 2-3 days.
•Enjoy!

These will last up to 3 months in the fridge and are the perfect on the go snack or addition to a BBQ!

Pizza night 🍕

I've recently changed pizza dough recipes to a higher protein one!
Tested it with the kids tonight and no one knew the difference 👌🏻

Also I just cannot deal with potato pizza, it has me in a total choke hold, lots of EVOO lots of sea salt flakes 🤤🤤🤤

Plaited pork pie + broccoli salad

Tried the pie for the first time tonight, as it's been on my to cook list for over a year!

It was so delicious! Very much like a big sausage roll, next time I'd like to try adding in some extra veg and see how it holds together.
Well worth a try!

The broccoli salad is my absolute fave salad, love love love it.

Weather today isn't screaming salad but anyway was still a perfect pairing!

Chocolate mousse 🍫

The other day I told Mark I had made Chocolate mousse, he was thrilled- his favourite he said.
Then I told him I'd made it from raspberries 😆 it was still good but not the traditional type.

Felt bad I'd hyped him up then gave him a healthy version 😂 so made traditional chocolate mousse yesterday and it was a HIT, so light and fluffy👌🏻

I was honestly a bit sceptical whether I'd like it or not as it does contain 4 eggs and I struggle with egg flavour, but I swear you can't taste them at all!

I used a 200g of Cadbury dark chocolate chips, next time I think I'd like to fold through a crushed peppermint crisp too!

Aussie meat pie- cookidoo

I had steak sitting in the fridge that needed to be used, I knew my children (who are still unwell) wouldn't allow me to cook a full meal tonight so I opened the cookidoo app and searched 'beef'.
After opening a few different recipes I landed on this one as I had basically everything I needed, only subbing out the mushrooms for carrot!

I made the shortcrust pastry (honestly easiest pastry ever to make!) And I just used frozen sheets of puff pastry for the top.

Surprisingly quick to make with not a lot hands on effort 🙌🏻

Mushroom risotto

We don't love the sliced mushrooms in ours so I put the mushrooms in the bowl whole first and blitz 3s speed 5 then set them aside and start the recipe.

The mushrooms then still get added in at the normal step.

This time I added pan fried chorizo on top, was the perfect touch!

This recipe is a great base recipe, sub out the mushrooms for your choice of vegetable, I have also skipped that step before and added in a cup of frozen peas and corn at the end while it rests, so versatile.
