These were absolutely delicious! Tender chicken meatballs in a rich, creamy garlic Parmesan sauce, perfect served over pasta.

500g chicken breast mince
1 egg
1 carrot, grated
1 zucchini, grated, excess moisture squeezed out
1 brown onion, finely diced
2 garlic cloves, minced
2 tbsp fresh parsley, finely chopped
1 tsp smoked paprika
1 tsp dried oregano
1 tsp salt
½ tsp black pepper
For the Sauce
1 small brown onion, finely diced
3 garlic cloves, minced
1 tsp smoked paprika
½ tsp dried oregano
½ tsp salt
½ tsp black pepper
⅓ cup chicken broth
2 tbsp butter
2½ tbsp plain flour
2½ cups whole milk
1 chicken stock pot
½ cup grated Parmesan cheese
2 tbsps fresh parsley, finely chopped
2 tbsps fresh chives, finely chopped
1-2 tbsp lemon juice
Method
1. Preheat the oven to 200°C and line a baking tray with baking paper.
2. Squeeze the excess moisture from the grated zucchini. In a large bowl, combine the chicken mince, egg, carrot, zucchini, onion, garlic, parsley, smoked paprika, oregano, salt and pepper.
3. Roll into meatballs slightly larger than golf balls, place onto the prepared tray, lightly spray with olive oil and bake for 20 minutes, or until golden and cooked through.
4. Meanwhile, for the sauce, heat a large frying pan over medium heat. Cook the onion for 3 to 4 minutes until softened.
5. Add the garlic, smoked paprika, oregano, salt and pepper. Cook for 1 to 2 minutes until fragrant, then pour in the chicken broth and simmer for 2 to 3 minutes until slightly reduced.
6. Add the butter and allow it to melt. Sprinkle over the flour and stir continuously for 1 to 2 minutes until a smooth paste forms.
7. Gradually whisk in the milk until smooth. Stir in the chicken stock pot and simmer for 3 to 4 minutes, or until the sauce has thickened.
8. Stir through the Parmesan, parsley and chives until the cheese has melted.
9. Add the cooked meatballs to the sauce and simmer gently for 1 minute.
10. Stir through the lemon juice, season to taste with extra salt and pepper if needed, then serve with mashed potato, pasta, rice or steamed greens.
