Another pasta dish on the menu tonight. It’s cold and wet and we wanted something warm and comforting so Creamy Chicken and Bacon Pasta Bake was what we chose.

Delicious, and Oscar even ate the broccoli, although he did say that was his least favourite part of the meal 🤣

“What’s for dinner, Mum?”

It ended up being just Oscar and me for dinner. I wasn’t particularly hungry after going out for a delicious lunch, but the 6’4”, 16-year-old growing teenager certainly was! 🤣

A quick look in the fridge and I decided to make my own little version of Creamy Tomato and Salami Fettuccine. A few substitutions were needed with what I had on hand:

🍅 Tinned crushed tomatoes instead of fresh
🥒 No zucchini, so that got left out
🥛 A tin of reduced-fat cream instead of fresh cream
🍝 Pasta shells instead of fettuccine
🥓 Added some ham and bacon to boost the protein for my growing boy!

The verdict from Oscar? “It was good.” 🙌 I’ll take that as a win! 😂

I enjoyed a small portion too, and it was delicious, although a little on the spicy side for me thanks to the chilli salami I found lurking in the fridge!

Another reminder that you don’t always need to follow a recipe exactly. Sometimes you just work with what you’ve got and create something delicious! 💚

Another batch of homemade granola ready for breakfast! 😍

I love mine topped with fresh berries and a big dollop of yoghurt. So simple, delicious and a great way to start the day!
