Well, Andrew and I thoroughly enjoyed our Ultimate Bacon Mac & Cheese tonight... and yes, Andrew said what he always says:

*"The salad was delicious!"* 🤣

Meanwhile, I was over here admiring the creamy, cheesy, bacon-loaded bowl of comfort sitting right in front of me!

To be fair, it was a very nice salad. But the Mac & Cheese? Rich, creamy, packed with bacon and exactly the sort of winter comfort food I love.

Tonight's Quickie – helping you get dinner on the table, one easy recipe at a time.*🍽️ – Spaghetti alla Carbonara**

Sometimes the simplest dinners are the best, and tonight's Quickie is a classic **Spaghetti alla Carbonara** from Cookidoo. Ready in around 30 minutes, this Italian favourite combines spaghetti, eggs, cheese, pepper and crispy guanciale or pancetta for a rich, silky sauce that's pure comfort food.

What I love about carbonara is that it relies on a handful of simple ingredients to create something truly special. No cream needed—the magic comes from the eggs and cheese creating a beautiful velvety sauce.

My Tips

✨ Use the best Parmesan or Pecorino you can find.
✨ Freshly cracked black pepper makes a big difference.
✨ Serve immediately for the creamiest result.
✨ Add a simple green salad on the side.
✨ A little extra cheese on top never hurts!

My Hack

No guanciale? Pancetta or bacon work beautifully. I also like to stir through a handful of peas at the end if I want to sneak in some extra veggies.
