๐ฎ Slow Cooker Beef Tinga (Brisket Tacos)
Ingredients:
2โ3 lbs beef brisket (or chuck roast)
1 large onion, thinly sliced
4 cloves garlic, minced
2โ3 chipotle peppers in adobo sauce (plus 2 tbsp of the sauce)
1 can (14 oz) fireโroasted tomatoes
1 cup beef broth
1 tsp cumin
1 tsp smoked paprika
1 tsp oregano
2 bay leaves
Salt & pepper to taste
Corn tortillas, warmed
Garnishes: diced onion, cilantro, lime wedges, queso fresco
Instructions:
1. Prep the base: Place sliced onions and garlic at the bottom of your slow cooker.
2. Blend the sauce: In a blender, combine chipotle peppers, adobo sauce, fireโroasted tomatoes, cumin, paprika, oregano, and beef broth. Blend until smooth.
3. Layer & cook: Season brisket generously with salt and pepper. Place it on top of the onions, then pour the chipotleโtomato sauce over the meat. Add bay leaves.
4. Slow cook: Cover and cook on Low for 8โ9 hours or High for 4โ5 hours, until the beef is forkโtender.
5. Shred & finish: Remove bay leaves. Shred the beef directly in the sauce, mixing well so every strand is coated in smoky chipotle goodness.
6. Assemble tacos: Spoon beef into warm corn tortillas. Top with onion, cilantro, queso fresco, and a squeeze of lime.
Chefโs Notes:
For extra depth, sear the brisket in a skillet before adding it to the slow cooker.
If you like it saucier, add an extra halfโcup of broth before cooking.
Leftovers make incredible quesadillas or nachos the next day.
his recipe gives you that taqueriaโstyle smoky richness with almost no effort โ the slow cooker does all the magic.
