Nobody talks about the 20 minutes spent arranging a tea towel 😅

Or the fact, that just outside the shot, are two less-than-impressed “helpers”

CREAMY CAULIFLOWER, LEEK & POTATO SOUP 🥣

2 tbsp olive oil or butter
1 leek, white and light green parts, sliced
1 cauliflower, cut into florets
700g white potatoes, peeled and roughly chopped
1 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp ground nutmeg
1 L vegetable or chicken stock
1 tbsp white miso paste
1 pinch salt and pepper

1. Add oil or butter to a large pot over medium-low heat & add leek & cook gently for a good 8 minutes until leeks a sweet & soft.

2. Add cauliflower, potato, herbs & stock & bring to a boil. Put the lid on, reduce the heat to a low, gentle simmer and cook for about 20 mins until veg is soft.

3. Remove from the heat and puree with a stick blender until creamy & smooth! Add the miso, blitz again and then adjust seasoning.

Serve in a bowl with a warm crusty slice of bread, hug the bowl to your chest and enjoy the comforts of warm, simple cooking!

Uh yeah! I sneak veg into my sweets too ( and so should you)

Kids LOVE brownies, I LOOOOOVE chocolate! So, lunchbox snack is sorted and a whopping big beetroot was grated right into the batter!

It gives an earthy, rich & luxurious fudgy taste but still sweet and squidgy with a thin cracked surface! Everyone is happy.

Sophisticated enough to serve at a dinner party, joyful enough to share with the children in their lunchbox!
