Hazelnut and chocolate parfait with poached pears and rhubarb, reduced poaching syrup, chocolate soil and roasted candied nuts

Radiance cake - pistachio financier sponge, lemon chibouste, mandarin compote insert, decorated Joconde sponge and citrus marshmallow

Ricotta fritters served with strawberry and balsamic coulis and marsala caramel foam (forgot to plate up the marsala caramel foam 🫣)
