I've been fumbling my way through this 'ol homesteading journey for nearly 20 years now ... none of it really came naturally to me & I'm pretty much self taught. Apart from teaching myself to cook, preserve & other homestead'y skills, for me the most gratifying to date has been crafting plant medicine. In a deep sense, plants have taught me so much more than decocting a bottle of winter tonic or a pot of nourishing soup. It's taught me ๐‘ฏ๐‘ผ๐‘ด๐‘ฐ๐‘ณ๐‘ฐ๐‘ป๐’€; which ironically means 'from the earth' and ๐‘ฏ๐‘ผ๐‘ด๐‘จ๐‘ต๐‘ฐ๐‘ป๐’€; 'living with intention & compassion'๐ŸคŽ

Known in the botanical world as Sambucus Nigra, Elderberry has been used by herbalists in natural medicine and by traditional cultures for centuries. Historically, it had the reputation for being a magical plant, for much more than just its medicinal healing abilities; often associated with protection, healing and connection to the spirit world โœจ

Happy Winter Solsticeโœจ๐Ÿ’› Iโ€™m not sure if itโ€™s the same with you but the older & wiser I become, I seem to embrace these days with so much more gratitude. Maybe itโ€™s finding solace in the daily magic this farm delivers & embracing the seasonal cyclical rhythms, that I find hope & courage to make better in this world we live in today. Recently here on Limestone Permaculture farm we farewelled our PDCHC class of 2026. Itโ€™s always a mix of joy & sadness as we say โ€œcya laytaโ€ ๐Ÿฅน but never good~bye. This class named themselves THE EDGE DWELLERS โ€ฆ I have to admit I was a wee perplexed when first heard the chosen name but you know, sometimes things sit before they fit & in this case, words never rang truer. I think originally it was based on a โ€˜gardening term', yet spiritually, it refers to a person who has stepped back from conventional societal norms to seek deeper meaning, self-awareness & connection to nature. Over the 3 months of guiding & educating, youโ€™ve all in your own way, grown as humans, touched our hearts, shared with us your stories of life, love & loss but most of all, hope. We all need hope. Hope keeps life moving forward with optimism & you all did that with such enthusiasm & grace. Nourishing you all was a pleasure (at times a little daunting as 4 students were chefs ๐Ÿซฃ) I hope you take away some farm spirit to cultivate into your daily lives โœจ ๐Ÿ’š Nici

t = teapsoon

1 cup arborio rice (pre-rinsed well)
1L coconut milk
1 can coconut cream
ยฝ cup raw honey or ยฝ tin coconut condensed milk
ยฝ cup coconut or rapidura sugar
ยผ t fine sea salt
1 heaped t ground turmeric
1 t ground cinnamon / native cinnamon myrtle
1 t native wattle seed extract (optional) / vanilla extract
ยฝ cup raisins / sultanas (pre-soaked in apricot brandy or other alcohol, though โ€˜opt.โ€™)

Turn slow cooker on LOW whilst prepping ingredients.
To the slow cooker add all ingredients except the raisins, hand whisk well to combine, cover then cook on low for around 4 hours. When the pudding has been cooking for about 4 hours and is thick and creamy looking & rice is just cooked through, add the soaked raisins, stir and cook on HIGH for a further 15 mins. Once happy, turn off slow cooker & serve into bowls or cups w/ a little sprinklinโ€™ of ground cinnamon or native cinnamon myrtle. Lovely the next day for breakfast with yoghurt. Nici
