I'm not a fan of those cakes that leave you guessing what flavour you’re actually tasting when you’re blindfolded. Maybe that’s why mud cakes are all the rage! This one I'm enjoying is absolutely scrumptious without being too gooey. You know what I mean? 🍫😊

Think of these as a cross between an apple crumble pie, and a cookie. You bake them as a slice, then cut into bars or “cookies” for lunchboxes, afternoon tea or simply a cuppa on the couch. They have a simple cooked apple topping that’s chewy, a buttery shortbread-style base, and a crumble made from the same mixture.
