Bhaji Ingredients:
Cauliflower – 2 cups
Green peas – ¾ cup
Potato – 1 large
Carrots – 2 medium
Onions – 2 large, finely chopped
Tomatoes – 2 large, finely chopped
Oil – 5 tbsp
Pav Bhaji Masala – 2 tbsp
Red chilli powder – 1 tsp
Turmeric – 1 tsp
Salt – to taste
Water as required
Coriander for garnish
Bhaji Method:
Cut vegetables into chunks. Heat 2 tbsp oil in a pressure cooker, add vegetables and fry for 10–15 mins. Add ½ tsp turmeric, 1 tbsp pav bhaji masala, salt and ¼ cup water. Pressure cook until tender.
Heat remaining 3 tbsp oil in a pan. Add onions and cook until pink. Add tomatoes, remaining turmeric, red chilli powder, 1 tbsp pav bhaji masala and salt. Bhuno until the masala is cooked well and oil starts separating.
Mash the cooked vegetables and add them to the onion-tomato masala. Add a little water, mix well and cook for 10–15 mins on medium heat. Adjust salt, chilli and pav bhaji masala according to your taste. Finish with fresh coriander.
To serve, heat some butter on a tawa and add 1–2 spoonfuls of bhaji. Mix it with the butter, then place the pav cut-side down and toast until lightly golden and buttery.
Serve the hot pav with bhaji, finely chopped onions, lemon wedges, fresh coriander and a little extra butter on top. 😋
