🍉 Creamy, Fruity & Refreshing – The Perfect Summer Treat

Ingredients
• ½ litre milk
• 2 tbsp sugar
• 1 cup watermelon, deseeded & diced
• 1 pack strawberry jelly
• 1 tbsp basil seeds
• ¼ cup water
• 2–3 tbsp condensed milk
• 1 tbsp Rooh Afza
• 1 cup ice

Method

1. Boil the milk with sugar, then allow it to cool completely and chill.
2. Prepare the strawberry jelly according to the packet instructions and cut into small cubes.
3. Soak basil seeds in water for 10 minutes.
4. In a large bowl, add watermelon, jelly cubes, soaked basil seeds, condensed milk, Rooh Afza, and ice.
5. Pour in the chilled milk and mix well.
6. Serve cold and enjoy!

Want to try something different? Then make these super easy and delicious chicken over rice with special garlic creamy sauce.

For the Chicken

- 1 kg chicken thigh pieces
- ½ cup yogurt
- 3 tbsp olive oil
- 3 tbsp mayonnaise
- 1 tbsp ginger-garlic paste
- 1 tbsp lemon juice
- 1 tsp smoked paprika
- Salt to taste
- ½ tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp dried oregano
- 1 tsp garam masala powder
- 1 tsp black pepper powder
- 1 tsp chilli powder

Method

Marinate the chicken with all the ingredients above. Leave overnight or at least 1 hour.

Cook the chicken in a pan until golden and fully cooked from both sides. Add 1 tbsp oil if needed.

Remove the chicken and chop into small pieces. Add 1 tsp smoked paprika and 1 tbsp butter. Mix well and set aside.

🍚 For the Yellow Rice
- 3 cups rice
- 2 tbsp butter
- 2 tbsp olive oil
- 1 tsp cumin seeds
- 2–3 cardamom pods
- 2 bay leaves
- 1 tsp ginger-garlic paste
- 1 cup concentrated chicken stock
(or 2 chicken cubes dissolved in 1 cup water)
- Salt to taste
- 1 tsp cumin powder
- 1 tsp garlic powder
- ½ tsp turmeric powder
- ¼ tsp yellow food colour
- ½ tsp garam masala powder
- Water as needed

Method

Heat butter and oil in a pan. Add cumin, cardamom, and bay leaves. Sauté until fragrant.

Add ginger-garlic paste and mix well.

Add chicken stock and all the spices.

Pour in enough water and bring it to a boil.

Add soaked rice and simmer on medium flame. Cover and cook until the rice is fully done.

🤍 For the White Sauce
- ½ cup Greek yogurt
- 1 cup mayonnaise
- ¼ cup cream
- ½ tbsp lemon juice
- ½ tsp salt
- 1 tsp sugar
- 1 tsp dried dill or fresh dill
- 1 tsp black pepper powder
- 4–5 garlic cloves, finely chopped

Method

Mix everything together and adjust the consistency as needed.

No more boring eggplants!! Try this baked eggplant recipe and you will be hooked!!

Baked Eggplant with Spiced Chicken Mince

Ingredients
1 large eggplant
Salt & black pepper, to taste
Olive oil

For the chicken filling:
250 g chicken mince
2 tbsp oil
1 tbsp chopped garlic
2 tbsp chopped onion
2 green chillies
2 red chillies
½ tsp turmeric powder
1 tsp red chilli powder
1 tbsp crushed coriander seeds
½ tomato, chopped
1 tbsp tomato paste
Salt, to taste

For topping:
Mozzarella cheese
Lemon juice
Chilli oil (optional)
Fresh coriander leaves

Method
1. Prepare & bake the eggplant:
Cut the eggplant in half lengthwise and score the flesh in a criss-cross pattern.
Season with salt, black pepper, and drizzle with olive oil.
Bake at 180°C for 30–35 minutes, or until soft and tender.

2. Make the chicken filling:
Heat oil in a pan. Add onion, garlic, and both chillies. Sauté until fragrant.
Add chicken mince and cook until it changes colour.
Add salt, turmeric, red chilli powder, crushed coriander seeds, chopped tomato, and tomato paste.
Cook until the mince is fully done and nicely combined.

3. Assemble:
Gently press the centre of the baked eggplant to create space.
Fill with the cooked chicken mince.
Top with mozzarella cheese.

4. Final bake:
Return to the oven and bake until the cheese melts and turns slightly golden.

5. Serve:
Finish with a squeeze of lemon juice, drizzle of chilli oil, and fresh coriander leaves.
Serve hot with yogurt and rice.
