Different ways to use the mince below 👇🏼

I have been making these for YEARS

Savoury mince:
500g lean beef mince
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 oregano
1/2 tsp sweet paprika
1/2 tsp cumin
1/4 tsp chili powder
Salt and pepper
2 tbsp Worcestershire (or to taste)
1 tbsp mustard (any will do, Dijon, American, seeded etc, season to taste as well)

Ways to use:
- Lettuce cups (end of vid)
- Rice paper rolls (lettuce, vermicelli, cucumber, carrot, fresh herbs & hoisin for dipping)
- Meal prep with carbs and veggies (I like sweet potato, broccolini, cottage cheese, avocado, honey & green Tabasco, my go to easy meal prep)
- Cottage pie (add frozen peas (or mixed veg) when cooking the mince, transfer to an oven safe dish and top with with mash (normal or sweet pot), maybe even some cheese, then bake)
- Dirty cheeseburger rice, add 1-2 tbsp ketchup with mustard and Worcestershire(or to taste), 1/3 cup of rice and cover with water (I like to add 1-2 tsp of bone broth here too), pop the lid on until rice is cooked, serve with shredded lettuce, tomato, pickles, shredded cheese and burger sauce

Sooo when are you coming over for dinner again? 🤍

Serves 6-8:

Pesto chicken:
2 tbsp olive oil (I used the oil from the semi sundried tomatoes)
1 brown onion, diced
Salt and pepper
Large handful fresh basil
250-300g semi sundried tomatoes in oil, drained (approx 160g of tomatoes)
120g baby spinach
4-5 garlic cloves, finely chopped
500g chicken breast mince
150g basil pesto
300ml light cream
1/2 lemon, juiced

3 zucchini, sliced thinly
500g cottage cheese
140g pasta sheets (6 in total for my square dish)
250g fresh mozzarella
Freshly grated Parmesan (measure with your heart)

Notes:
- Slice and salt zucchini slices on both sides and sit for 10-15 minutes to draw out excess moisture. This will prevent a very watery lasagne!
- Cottage cheese instead of béchamel
- Layers; cottage cheese, pasta, chicken, cottage cheese, zucchini, chicken, cottage cheese, pasta, chicken, cottage cheese, zucchini
- Cover with foil and bake for 1 hour or until you can place a knife in the centre easily with little friction
- I would actually pop the cheese on in the last 15 minutes, not when assembling, I just had to film it while I still had light. Cheese on, back into the oven uncovered to melt and brown
- Let it sit for 5-10 minutes before slicing otherwise it won’t hold itself when serving x
