🇸🇱 🇸🇱💃🏾 A BOOMBOX, A MARKET FULL OF TRADERS… AND AN UNEXPECTED DANCE PARTY! 🔥😂

📍 Kroo Town Road Market, Freetown, Sierra Leone.

🇸🇱 Just two weeks ago, while in Freetown working as a private chef, catering for an international team and preparing Afro-vegan cuisine, I found myself back at one of my favourite shopping spots!

I’ve been shopping at this market for 10–15 years, and many of the traders have become familiar faces and friends.

🇸🇱 So when someone showed up with a boombox and the music started playing, how could I resist? 😂 I was absolutely delighted to put my shopping aside and join the traders for an impromptu dance!

🇸🇱 No planning, no rehearsals, just music, laughter, community and pure Sierra Leonean energy!

Sometimes the best memories happen when you’re simply living in the moment!

🌿🇸🇱 LUMLEY MARKET ON A SUNDAY FREETOWN, SIERRA LEONE! 🇸🇱🌿

I’ve been gone for a minute, but I’m BACK HOME! ❤️🇸🇱

For the past 12 days, I’ve been in Freetown working as a private chef for the Italian team at the African Diaspora Fashion Hub, in collaboration with Gambian Fashion Week cooking for Laioung , an exceptionally gifted artist, and , a Gambian fashion designer ( they are both based in Italy.🇮🇹 )

My mission in the kitchen? 👩🏾‍🍳✨ Preparing delicious Afro-vegan meals for Laïoung, while creating other delicious dishes for Yulti Official. Different tastes, different needs, but always the same passion, creativity and love for food! ❤️🍽️

On Sunday, I headed to Lumley Market in search of fresh calaloo — our beloved Sierra Leonean greens! 🥬🌱 Fresh ingredients are at the heart of my cooking, bringing African flavours and heritage straight to the plate.

The sights, the sounds, the energy of the market… even on a Sunday, there’s a story to tell! Normally, Lumley Market is buzzing with even more life, colour and noise.

🥕🌿 MODERN AFRO-VEGAN CARROT RIBBON SALAD 🌿🥕

Plant-based. Fresh. Vibrant. SERIOUSLY CRUNCHY! 💥

Forget ordinary coleslaw if you love coleslaw, this takes it to another level! 😋

Beautiful raw carrot ribbons tossed with crisp radish sprouts, toasted Egusi (African melon seeds) and a sprinkle of black & white sesame seeds.

But the real magic? THE VINAIGRETTE! 🔥

✨ Mustard
✨ Apple balsamic
✨ Agave syrup
✨ Sesame oil

That sweet, tangy, nutty vinaigrette is what brings every ingredient together, coating those crunchy carrot ribbons with a beautiful balance of flavour.

This is modern African vegan cuisine — colourful, fresh, nutritious and packed with texture.

No boring salad here. Just pure crunch, flavour and Afro-fusion on a plate! 🌍

Last night in Marbella 🇪🇸✨

A taste of Spain at Bodegas La Venencia, right in the heart of Marbella.

The star of the evening was the arroz negro — beautifully cooked black rice infused with squid ink, packed with mussels, prawns, langoustine, calamari and squid. 🦐🦑🦪 Deep, briny, intensely savoury and absolutely top notch!

Served alongside a refreshing tomato salad with melva, which complemented the richness of the rice perfectly.

Arroz negro may have its traditional roots in Spain’s Mediterranean regions, particularly Valencia and Catalonia, but it has certainly found its place on the Costa del Sol, where seafood, rice and Mediterranean flavours are at the heart of the local dining experience.

If you come to Marbella, Costa del Sol, this is definitely one to put on your Spanish food list. 🇪🇸❤️

When I’m on vacation, I always want to eat local — and today’s lunch in the beautiful white village of Ojén, Málaga, was exactly that. 🇪🇸

At Restaurante Solís, we had a fritura mixta de pescado y marisco — a delicious mixed seafood fry in a light, crispy batter — followed by tender baby squid in a buttery garlic and parsley sauce, with golden chips and a big fresh salad on the side.

Simple, local, generous and absolutely divine. ❤️

Ojén is one of those beautiful Andalusian mountain villages where the whitewashed houses, winding streets and surrounding Sierra make you slow down and enjoy the moment. And what better way to experience it than around a table with good local food?

This is my kind of vacation — eat local, eat well, and savour every bite. 🇪🇸

Happy New Month everyone 1 August Wishing you all a month filled with blessings, good health, love, and delicious food. ❤️🍜

🌍 Afro Pho – East meets West Africa.

Here’s my Afro-fusion take on the classic Vietnamese pho, reimagined with bold African flavours.

I started with a slow-simmered beef bone broth infused with fresh ginger, garlic, leeks, carrots, and scallions. Then came the magic: Chinese five spice paired with two iconic West African spices—calabash nutmeg and grains of Selim, both traditionally used in West African pepper soups. Together, they create a rich, earthy, aromatic broth with incredible depth. Finished with a touch of soy sauce and sesame oil, every sip is pure comfort.

Served with noodles, napa cabbage, fresh basil, chilli, onions, and paper-thin slices of beef. If you’re new to pho, don’t worry—the beef is not eaten raw. The steaming hot broth gently cooks the delicate slices in just a few seconds, making them beautifully tender and perfectly safe to enjoy.

This is what Afro Fusion means to me: respecting the traditions of Vietnamese cuisine while celebrating the bold, soulful flavours of West Africa | flavour bomb! 🔥
