Chocolate Marshmallow Squares

These are one of those simple little treats that never last long in our house. I call them Chocolate Marshmallow Squares, and my kids absolutely love them. They’re quick, easy, chocolatey, and packed with marshmallows—nothing fancy, just a good old-fashioned homemade treat that always disappears from the container.

I’m Tiffany, the author behind The Bay Kitchen cookbooks. What started as a love for the recipes I grew up with here in Newfoundland has now become two cookbooks filled with the food, stories, traditions, and everyday meals that feel like home.

Whether you’ve been following along from the beginning or you’re brand new here, here’s a little bit about me—and the two books that I wrote.

Meat cakes might be a little niche, but if you grew up eating them, you know exactly how good they are. Made with simple corned beef and potatoes, they’re the definition of a supper that stretches—humble ingredients turned into something filling, comforting, and delicious. I grew up on these, and they’re still one of those meals that tastes like home.

Some of the meals we remember most weren’t made with fancy ingredients — they were made with whatever was on hand, and somehow, there was always enough.
