ENSAYMATCHA RECIPE
(Green Tea Ensaymada)
Dough Ingredients
500 grams flour (50/50 bread flour and allpurpose flour)
½ tbspn salt
½ cup white sugar
2 ½ tspn yeast
½ cup milk powder
½ tbspn bread improver (optional)
1 eggs large (60grams)
220grams lukewarm water (add if needed)
1/4 cup butter room temperature
½ tbspn green tea emulco by Hicaps Marketing Corporation (add more if desired)
Drops of apple green liquid color for vibrant green
Procedure
Combine all ingredients in a bowl,mix until smooth and elastic,add th butter let the dough absorbed,transfer to slightly grease bowl brush the top slightly to prevent drying of dough,rest let it rise until double in size about 1 to 2hours depends on the weather,
Topping
Creamcheese frosting
½ cup room temp butter
¼ cup roomtemp cream cheese
½ cup powdered sugar
Grated cheese
Filling extra cream cheese
1 tbspn each dough (cut into cubes)
Procedure
Cream the butter until pale color add the creamcheese and icing sugar mix until ni lumps and set aside or chill while waiting to bake the bread
When the dough is ready
Punch to release air and portion about 40 to 60 grams each flatten and put the creamcheese seal it well,
Put in slightly grease pan
Let it rise about 45 to 1hr
And bake 150c only to prevent changing of purple color bake 18 to 22 mins
Let it cool completely
Brush with creamcheese and grated cheese on top
