It's been a minute!
I've been cooking and baking up a storm and while I work on other recipes to bring you all. I wanted to post this super easy super delicious recipe.

Ripe bananas are great for baking, making pancakes and making ice cream, but I was wanting something a bit different than just Banana Bread. (Don't worry I'm still making Banana Bread)

Enter Banana Oatmeal Cookies, maybe the easiest cookies you'll ever make.

Ingredients:
2 ripe bananas, mashed.
Oats. (As many as you need)
Chia seeds (optional)
Chocolate chips (optional)

1.) Preheat oven to 395โฐF and place parchment paper on a greased baking sheet.

2.) Mash bananas in a medium mixing bowl until nice and mushy.

3.) Add oats, in batches mixing as you go until you can palm the cookie "dough." For mine I used about 1 1/2 cups of large flake oats.

4.) Mix in chia seeds, nuts, dried fruit or chocolate chips if you'd like and then shape into cookie shape, you can do whatever you want shape wise really. If you want square cookies go ahead! Heart shaped? Sure! Stars? I mean why not? (For the mix-ins let your heart be your guide, if you want a little or a lot that's up to you, just make sure it doesn't overwhelm the dough)

5.) Place in preheated oven and bake for 15 minutes, let cool and enjoy!

I love this recipe because it's so simple, there aren't many allergens involved, and no added sugar unless you've added things like chocolate chips. It's also super versatile in terms of doubling, if you want more cookies use more banana and oats, if you want less or only have one ripe banana you can still make these.

Soft, chewy, and so easy.

This recipe is perfect for serving two people, but itโ€™s easy to scale up if youโ€™re hosting a larger groupโ€”just increase the meat quantity as the Au Jus makes enough to generously cover up to 4 servings.

Any choice cut of steak, approximately 1 inch thick

โ€ข ยผ cup coffee grounds
โ€ข 2 tbsp ancho or chipotle chili powder
โ€ข 5 tsp brown sugar
โ€ข 1 tbsp smoked paprika
โ€ข 1 ยฝ tsp coriander powder
โ€ข 1 tsp mustard powder
โ€ข 1 ยฝ tsp fresh cracked pepper
โ€ข 1 tsp kosher salt (adjust to taste)
โ€ข 1 tsp ground red chili flake

โ€ข 4 tsp Better than Bouillon beef stock (or 4 cups beef stock)
โ€ข 4 cups water
โ€ข 2 whole green/spring onions, quartered
โ€ข 1 head of roasted garlic
โ€ข 2 dried mushrooms (e.g., Sh*take)
โ€ข 1 ยฝ tsp ground turmeric
โ€ข 2 tsp garlic powder
โ€ข 1 tsp onion powder
โ€ข Salt and cracked pepper to taste

โ€ข 5 cloves garlic, freshly grated
โ€ข 1 tsp salt

*Note- there is a science to this mayo and how the garlic remains pungent and has that kick, I will be posting about that garlic science in the future.

โ€ข Smoked cheddar or preferred melting cheese

About 6 hours before cooking, generously coat your steaks with 5 tsp of the dry rub mixture. The combination of coffee grounds, chili powders, brown sugar, and other spices creates a rich flavor profile that infuses into the meat as it dry brines in the fridge. This step ensures every bite is packed with deliciousness.

While the steaks are brining, prepare the savory Au Jus. In a medium saucepan, bring 4 cups of water to just below boiling. Dissolve Better than Bouillon beef stock in the warm water, or use your own beef stock if preferred. Add quartered green onions, roasted garlic cloves, dried mushrooms, and a blend of turmeric, garlic powder, and onion powder to enhance the umami depth. Let it simmer gently for about 20 minutes, tasting occasionally and adjusting seasoning as needed. This step adds layers of flavor that complement the richness of the steak.

An hour before cooking, remove the steaks from the fridge to bring them to room temperature. Searing the steaks is a crucial step to achieve that perfect crust and juicy interior. Heat a stainless steel pan over medium-high heat and add a high smoke point oil like vegetable or canola oil. When the oil shimmers, carefully place each steak in the pan, ensuring they have enough space to sear evenly. Use a meat thermometer to monitor donenessโ€”aim for an internal temperature of 150ยฐF for a medium-rare to medium steak. Once cooked to your liking, transfer the steaks to a cutting board to rest for 10 minutes. This resting period allows the juices to redistribute throughout the meat, ensuring every bite is tender and flavorful.

- 2 cup large flake oats

- 3 cups water

- pinch kosher salt

-3 tbsp Cocoa Powder - I like red cocoa powder myself, but black, Dutch process or any other type of cocoa powder will work, itโ€™s really about your preference.

-2 tbsp Brown Sugar - or sugar alternative, any sweetener works I just really prefer brown sugar in my oats.

-1 tsp Vanilla Extract

-2 tbsp Coffee Flavored Yogurt - I like Balkan style or Icelandic style personally for its thick texture and higher protein count.

-Chocolate Chips - whichever type you prefer, some like dark, some like milk, and some like semi-sweet. Cocoa nibs will also work here for a low sugar option.

When you add the oats to the boiling water you will also add the vanilla extract, cocoa powder and brown sugar, stir to combine and then set the time as you would do for the plain oats.

Once the oats are ready you will add them to a bowl, top with the yogurt and sprinkle on some chocolate chips. Add in any cut up fruit you would like, my recommendation would be to stick to things like dark berries, cherries, or bananas as they would pair with the flavor combo of the coffee and chocolate really well.

Oatmeal is one of the bases of a lot of my breakfasts, and the way I cook it is super easy. Once youโ€™ve mastered the basics of oatmeal it opens you up to countless options to expand on.

Ingredients:

Large Flake Oats.
You can use other oat styles but I would avoid quick, instant and steel cuts. Those have a different cooking process. I like the large flake because it has a good structure and can withstand both short and long cook times.
Water
Salt

Now measurements are left blank here because the format is pretty simple. You will do 1 cup oats to 1 ยฝ cups water.

Examples:

2 cups oats - 3 cups water.
3 cups oats - 4 ยฝ cups water.

Salt is always measured as a pinch, or whatever you feel most comfortable with, the plan isnโ€™t to make them salty, but oats without a dash of salt will end up tasting like cardboard no matter what else you are adding to them.

Cooking Process

The process of cooking the oats does not change with the different measurements, the process will always remain the same.

Start by bringing a medium saucepan or small saucepan of the measured water to a boil after adding the dash/pinch of salt. (I would really really recommend using kosher salt, itโ€™s my salt of preference and when I say a pinch or dash I am basing that off of kosher salt. If it was table salt you would want to scale that down measurement wise)
Once the water is at a boil you will drop the temperature to low and add the oats, set a timer and let cook for 3 minutes, once the timer goes off, cover the pot and take it off the heat setting a timer for 5 minutes.
Once that time has gone off the oats are ready.

Stir and enjoy as you would like.
If you are not adding any seasonings or sweeteners to your oats during the cooking process some great ways to top plain oats is with brown sugar, cream or milk, different jams or compotes, or any number of fruits or mix-ins. I personally am always going to love the classic oats-brown sugar-cream combo.
