Baking brings me joy โจ
After a dreary walk in the rain ๐ฆ, I decided a quick dessert was in order.
Are you familiar with Brownie Pudding? My mother and grandmother used to make it, and I love the simplicity.
For those who are unfamiliar, it's a cake with a pudding sauce underneath. But the real magic ๐ช is that the cake is put in the bottom of the pan, then brown sugar mixed with cocoa and hot water are placed on top. You're convinced something is VERY wrong ๐. After 45 minutes, the cake rises to the top, and a luxurious sauce is underneath. ๐

Brownie Pudding
1 cup sifted flour
2 tsp baking powder
3/4 cup granulated sugar
2 tbsp cocoa
1/2 tsp salt
1 tsp vanilla
2 tbsp melted butter
3/4 cup chopped walnuts
3/4 cup brown sugar
1/4 cup cocoa
1 3/4 cups hot water
- Preheat oven to 350 deg F.
- Sift together flour, baking powder, granulated sugar, 2 tbsp cocoa, and salt. Mix in the milk, vanilla, and melted butter. Add chopped nuts. Pour into a greased 8"x8"x2" pan.
- Mix brown sugar with 1/4 cup cocoa. Spread evenly over the batter. Pour hot water over the sugar mixture.
- Bake in the oven at 350 deg F for 40 to 45 minutes.
