🥩 Reverse Seared Eye of Round Roast 🔥

An infallible method to transform a lean cut (like an inside round) into an incredibly tender, juicy masterpiece with a spectacular, authentic smokehouse dark bark. 🧑‍🍳

* ⏱️ Prep Time: 15 minutes
* ⏳ Resting Time: 1 hour (before) + 20-30 minutes (after)
* 🌡️ Cook Time: Approx. 2 hours
* 🍽️ Servings: 4 to 6 people

🛒 Ingredients

* 1 beef roast (e.g., 2 to 3 lb inside round roast) 🥩
* 2 tbsp Dijon mustard 🟡
* 1 tsp garlic purée 🧄
* Your favourite beef rubs 🧂
*(For that spectacular jet-black look: a combo of Garno's Charbon de bois (Charcoal) and Texas rubs) 👑*

📝 Step-by-Step Instructions

The Prep 🥣

1. Take the beef out of the fridge and let it temper at room temperature for 1 hour before cooking. 🕒
2. Pre-heat your pellet grill to 250°F. 🪵💨
3. In a small bowl, mix the Dijon mustard and garlic purée together. 🧄🟡
4. Slather a thin layer of this mixture over the entire roast to act as your binder.
5. Apply your favourite rubs evenly to coat the whole surface. 🪵🖤

The Reverse Sear 🌡️

6. Place the roast on the pellet grill for indirect cooking. Cook and smoke at 250°F until the internal temperature of the meat hits 115°F. 💨
7. As soon as it hits the target, crank the grill up to 450°F (or open the direct flame searing slot) for the final sear. 🔥
8. Turn the roast to get a beautiful crust on all sides, and pull it off the grill the second the internal temperature hits 130°F at the core. 🎯

Managing the Rest (Crucial!) 🛑

9. Remove the meat from the grill and let it rest unwrapped on a cutting board until the internal temperature stabilizes and begins to drop. 🌬️ (The carryover cooking will naturally bring it to a perfect medium/medium-rare).
10. Once the temperature has peaked and stabilized, tent it loosely with aluminum foil to keep it warm until serving. 🎯
11. Carve the roast as thin as possible, slicing perpendicularly against the grain. 🔪✨
