Lemon Chicken
Chicken breasts sliced thin
2 lemons
½ cup Chicken stock or white wine
1 tbsp butter
Salt and pepper
Olive oil
Fresh parsley
Flour
Coat the chicken in flour on both sides
Heat some olive oil in a pan and cook the chicken until browned on both sides
Season with salt and pepper
Add the stock ( or white wine)
Add lemon zest from one lemon and the juice from both
Add the butter and parsley
Let the chicken cook in the sauce for a couple of minutes and then remove and set aside
Let the sauce simmer on its own until it’s thickened then plate the chicken top with the sauce.
