Lemon Chicken

Chicken breasts sliced thin
2 lemons
½ cup Chicken stock or white wine
1 tbsp butter
Salt and pepper
Olive oil
Fresh parsley
Flour

Coat the chicken in flour on both sides
Heat some olive oil in a pan and cook the chicken until browned on both sides
Season with salt and pepper
Add the stock ( or white wine)
Add lemon zest from one lemon and the juice from both
Add the butter and parsley
Let the chicken cook in the sauce for a couple of minutes and then remove and set aside
Let the sauce simmer on its own until it’s thickened then plate the chicken top with the sauce.

Ginger and Turmeric Shots

Ingredients:
1 cup ginger root (roughly chopped)
½ cup turmeric (roughly chopped)
skin on is OK as long as the ginger and turmeric are clean
2 lemons (peeled)
2 oranges (peeled)
1 cup water
pinch of black pepper (optional)

Add everything to a blender and blend until everything is combined
Strain using a fine mesh strainer, you should have juice with some pulp
Strain again and even a third time until the juice is mostly pulp free
Store in a mason jar, the juice will last 7-10 days

Chicken Caesar Tacos

I lb ground chicken
12 street size tortillas ( Corn or Flour), I like the flour better
1 Caesar salad kit + extra bacon, parm, lemon, croutons

Spread out the chicken onto the tortillas,
Season with salt, pepper and garlic powder,
Heat some olive oil in a pan and add the tacos meat side down
When the chicken is cooked and browned flip then and let them fry tortilla side down for 30 seconds
Add some Caesar salad to each taco
Enjoy!

Dumpling Bake

Ingredients:
1 can coconut milk
1-2 tbsp red curry paste, depending on how spicy you want it
1tbsp soy sauce
½ tsp sesame oil
½ tbsp rice vinegar
2 cloves chopped garlic
1 tbsp of finely chopped ginger
2-3 chopped green onions
A handful of chopped cilantro
A handful of spinach or bok choi
Mix thoroughly, making sure the curry paste is incorporated
Two blocks of ramen (optional, you can do just dumplings)
Enough frozen dumplings to fit the dish

Instructions:
Add everything to one baking dish
Pour hot water over the ramen and dumplings
Cover with foil and bake in the oven at 400
Check after 15 minutes, keep baking until everything is tender and cooked

Alfredo Chicken Meatballs

The meatballs:
1lb ground chicken
salt and pepper to taste
1 egg
1/2 tsp italian seasoning
1-2 cloves garlic finely chopped
1 tsp chopped italian parsley
1 tbsp grated parm
1 tbsp bread crumbs (optional)

The Sauce:
2 tbsp butter
4 cloves chopped garlic
1.5 cups heavy cream
¾ cup grated parm
1-2 cups baby spinach
Cracked black paper
Instructions:
In a bowl add the ground chicken, Season with salt and pepper, then add an egg, Italian seasoning, garlic, fresh parsley, and grated parm and mix.
Line a baking sheet with parchment paper and drizzle the paper with olive oil.
Use your hands or a scoop to shape the meatballs, lay them out on the pan and drizzle the tops with more olive oil.
Bake for 20+ minutes at 400 until cooked through and golden.
In a pan melt the butter, add the garlic and cook for one minute, add the cream and heat until it starts to thicken then stir in the grated parm, spinach and pepper.When the spinach wilts, add the meatballs and toss them in that sauce.
Serve with crusty bread

No Fold blanket Dumplings
Ingredients:
1lb ground chicken
Salt and white pepper to taste
1-2 shredded carrots
2 chopped green onions
fresh grated ginger to taste
2 cloves chopped garlic
1 tsp soy sauce
½ tsp sesame oil
Dumpling wrappers

Top with Chilli oil or Chilli Crisp
Sesame Seeds

In a large bowl add the ground chicken
Season with salt and white pepper
Add shredded carrots, chopped green onions, grated ginger, and garlic
Drizzle with soy sauce and sesame oil
Mix everything together
Heat oil in a pan, medium high
Drop in evenly sized meatballs
Once the bottoms start to brown, place a dumpling wrapper over each one
Pour ½ cup of water
Cover and let them steam
Cook until all the water evaporates,
Make sure the chicken is fully cooked, and the wrappers are soft and tender
Top with soy sauce, chili oil and sesame seeds

French Onion Soup Meatballs

Meatballs:
1 lb ground beef
½ cup Panko breadcrumbs soaked in 2 tbsp milk
1 tbsp chopped parsley
1 tsp herbs de provence
1 tsp thyme
½ tsp salt
½ tsp pepper
½ onion very finely chopped
4 cloves chopped garlic
¼ cup grated Gruyere cheese
1 egg
Olive oil for the pan

Sauce:
1 tbsp veggie stock ( deglazing)
2 tbsp butter
2 ½ onions sliced thin
Salt and pepper
1 tsp herbs de provence
1-2 tbsp flour
2+ cups beef stock
1 cup grated Mozzarella
½ cup grated Gruyere

Instructions:
Add all the meatball ingredients to a bowl and mix
Roll the mix into golf ball sized meatballs
In an oven safe pan add olive oil and brown the meatball on all sides and then set aside
Deglaze the pan with veggie stock or white wine
Add the butter
Add the onions plus salt and pepper
Allow the onions to cook down for at least 20 minutes on medium heat, stirring frequently until they are soft
Stir in garlic and herbs
Sprinkle with flour, mix to incorporate and then add the beef stock
Let is reduce until it gets to the thickness you like
Add the meatballs
Top with the Gruyere and Mozzarella
Broil until the cheese is melted and bubbly
Serve with baguette bread for dipping

Spicy Tuna on Crispy Rice

2 Cups Sushi rice, cooked according to package instructions
1 tbsp rice vinegar
½ tbsp mirin
½ tsp sesame oil
1 tsp sugar
1 tsp salt
Mix the rice seasoning together and incorporate into the cooked rice
Put two pieces of plastic wrap over a small rectangular baking sheet
Spread the rice evenly, cover with the extra plastic wrap and then use a heavy pan or roller to flatten and even out the rice.
Put the rice tray in the fridge for at least 2 hours.

Cut two yellowfin tuna steaks into small pieces and in a bowl add:
1 green onion finely shopped
1 tbsp soy sauce
1 tbsp japanese mayom or more depending the texture you want
½ tsp sesame oil
A few squirts of sriracha depending on how spicy you want it
A sprinkle of black sesame seeds
Mix until you have a spreadable looking mixture and set aside in the fridge

Remove the top layer of plastic wrap from the rice and cut into rectangles.
The rice will be sticky so wet your knife between each cut.

Fry the rice pieces in oil until they are crispy on both sides and let them drain on a paper towel lined dish.

Add a spoon of the tuna mix on each piece of rice and top with green onion or a slice of jalapeno.

Cheese + Eggs + Waffle Maker = Chaffles
Eggs, cheese plus any other ingredients you like, I used green onion, but bacon, peppers or other veggies would be great too.

Lazy Lasagna
Half a box of lasagna noodles
1 jar pasta sauce
¾ lb ground beef
¼ lb Italian sausage
Salt, pepper, garlic powder
Ricotta
Shredded mozzarella
Grated parmesan
Basil

In a large pan season the ground beef with salt, pepper and garlic powder.
Add the sausage.
Once the meat’s browned, drain off the excess oil.
Reduce the heat to medium-low.
Add half the jar of sauce.
Break up the lasagna noodles and tuck them into the sauce.
Add the rest of the sauce and about half a cup of water, cover, and let it cook until the noodles soften.
Add 6-8 spoons of ricotta, ½ cup of mozzarella and some grated parm.
Cover until the cheese is melted.
Finish with some fresh basil.
