Lemon Posset. Made with just three ingredients,this simple chilled dessert is a definite go to any time of the year. A smooth, creamy custard-like dessert without needing eggs or gelatin. All you need is heavy cream, sugar, a lemon, and less than 10 minutes on the stovetop. It sets up overnight in the fridge which makes it a perfect make-ahead dessert. Can also be made with orange or lime. Top with fruit, nuts or even granola. Pairs nicely with shortbread.

This one's for the garlic lovers. Gambas al Ajillo is a classic Spanish tapas dish of shrimp swimming in a garlicky olive oil sauce. This version includes chipotle chili flakes and a splash of white wine. This dish is garnished with parsley, manzanilla olives & Spanish smoked paprika. Served with a grilled lemon slice and some crusty bread to sop up all the flavourful sauce.
