For me, early October has always meant travel. Fiji in 2016, LA in 2017, Central Europe in 2018… then I moved to Toronto and settled down.

Looking back at photos from those years, I’m reminded of a freer, wandering life and the joy of discovering new flavors.

Now, my travels are to daycare, playgrounds, and grocery stores πŸ˜…, and my adventures take the form of homemade meals for my little one.

Like most mothers, I wish I could freeze these moments to keep her small, soft, and endlessly enchanting. Yet, sometimes, when nostalgia and sentimentality wash over me, I also wish she were old enough to step with me into the unknown, to taste the world, to explore flavors, sights, and stories far beyond the familiar walls of our living room and kitchen.

Stuffed tofu β€” 酿豆腐 β€” the kind of comfort that lives in my memories 🍲✨

Soft tofu squares filled with juicy, savory meat and gently pan-fried until golden. It’s humble, hearty, and hits the soul every time.

Ingredients:
-Firm tofu (cut into thick cubes, centers scooped out)
-Ground pork (or chicken)
-Minced garlic and ginger
-Chopped green onions and cilantro
-One egg
-Soy sauce
-Sugar
-Chilli bean sauce
-Salt and pepper
-Sesame oil
-Cornstarch (optional, for binding)

Recipe:
1. Mix ground meat with egg, ginger, garlic, green onions, cilantro, chilli bean sauce, and salt & pepper.
2. Sauce: mix soy sauce, sugar, starch, and a touch of sesame oil.
3. Gently stuff the meat mixture into tofu pockets. Pan-fry until golden on both sides, then simmer with a splash of water and sauce to let the flavors soak in, until the centre of the meat reaches F165.
4. Serve warm, with rice or just by itself.

This one’s for the heart. 🧑

Creamy, garlicky, cheesy, and done in one pot. Dinner doesn’t get more comforting than this.

⚠️ Warning: this recipe contains unapologetic amounts of garlic, butter, and cheese. You’re welcome. πŸ§„πŸ§ˆπŸ§€

πŸ›’ Ingredients:
β€’ 3 chicken breasts, diced
β€’ 2 tbsp butter
β€’ 10 cloves garlic, minced
β€’ 1/2 onion, finely chopped
β€’ 2 cup mushrooms, sliced
β€’ 1 tsp garlic powder
β€’ Salt & pepper to taste
β€’ 1 tsp chili flakes (optional for a little kick)
β€’ 2 cups uncooked rice (I used buttery/Parmesan-style rice)
β€’ 3.5 cups chicken broth
β€’ 1/2 cup grated Parmesan (plus more for topping)

πŸ‘©β€πŸ³ How to make it:
1. SautΓ© onion, garlic, and mushrooms in butter until soft and fragrant.
2. Add chicken breast, cook until lightly browned.
3. Stir in garlic powder, chili flakes, salt & pepper.
4. Add rice and chicken broth, bring to a boil.
5. Cover and simmer on low for 18–20 mins until rice is tender.
6. Stir in Parmesan, adjust seasoning, and let it get creamy.
7. Top with more cheese (obviously) and enjoy!
