🥭 Sugar Free Mango Syrup

Ingredients

Peel from 1 ripe mango, washed well.

½ mango, chopped

1 3/4 cup water

2-3 Tbsp monk fruit sweetener (adjust to taste, more if preferred)

1 tsp lemon or lime juice

Optional: ½ tsp vanilla

Directions

Add the mango peel, chopped ½ mango and water to a small saucepan.

Bring to a gentle boil, then reduce the heat and simmer for 15–20 minutes, stirring occasionally.

Mash the mango and peel gently with a spoon to release as much flavour as possible.

Strain the mixture through a fine-mesh strainer, pressing the fruit to extract all the liquid.

Return the liquid to the saucepan and add the monk fruit sweetener and lemon/lime juice.

Simmer uncovered for another 5–10 minutes, until slightly reduced. Keep in mind that monk-fruit sweeteners don't always thicken like regular sugar.

Stir in vanilla, if using.

Cool completely and pour into a clean jar or bottle. Refrigerate.

Perfect in drinks, desserts or on pancakes.

🍊🍵 Blended Iced Matcha with Orange Cream 🍵🍊

If you love an orange creamsicle AND matcha, you need to try this! It’s cold, creamy, refreshing and so easy to make. 💚🧡

🍊 Orange Cream

You’ll need:

1/3 cup whipping cream

1–2 tsp sugar-free or regular orange Jello powder, to taste

Whip the cream with the orange Jello powder until thick and fluffy. Start with a little Jello powder and add more until you get the orange flavour you like. Keep chilled until ready to use.

🍵 Blended Matcha

You’ll need:

1–2 tsp matcha powder

½ cup cold water

1–2 tbsp sweetener, to taste

1–1½ cups ice

Splash of milk or cream, optional

Add the matcha, cold water, sweetener and ice to a blender. Blend until smooth and frothy. Add a splash of milk if you want it a little creamier.

Pour the icy matcha into a glass and top generously with your orange cream. 🍊

Give it a gentle stir as you drink so the orange cream swirls into the matcha.

The result? A refreshing iced matcha with a sweet, creamy orange twist. Basically an orange creamsicle met a matcha latte! 😍

Better than take out and easier on the wallet!

YOU NEED TO TRY THIS OVERNIGHT FOCACCIA! 😍

This one has been a staple for years! Mix it up. Put it in the fridge. Go to bed.
The next day, you’re practically halfway to homemade bread! 🙌

This focaccia is crispy on the outside, soft and fluffy on the inside, and you don’t even have to knead it!

🫒 Overnight Focaccia

You’ll need:

4 cups all-purpose flour
2 tsp instant yeast
2 tsp salt
2 cups lukewarm water
2 tbsp olive oil, plus extra for the pan and top
Flaky salt
Rosemary, garlic, tomatoes, olives or your favourite toppings

🌙 The night before:

Mix the flour, yeast and salt together. Add the water and olive oil and stir until you have a sticky, shaggy dough.

Cover the bowl and put it in the fridge overnight — about 8–24 hours. ❄️

☀️ The next day:

Take the dough out of the fridge and let it sit at room temperature for about 1–2 hours.

Generously oil a 9x13 pan and transfer the dough into it. Gently stretch it toward the edges.

Let it get nice and puffy, then drizzle the top with more olive oil.

Now comes the fun part! 👆
Dimple that dough with your fingertips!

Add your favourite toppings and sprinkle with flaky salt.

🔥 Bake at 425°F for 25–30 minutes, or until golden brown and crispy.

Let it cool slightly… then cut yourself a piece before everyone else eats it! 😂

🌿Today we celebrated our team. We had so much fun with bowling, batting cages and corn hole. Good food 🌮 and good drinks! We of course had to make uniforms!

🍌🍫 Nothing beats homemade banana bread!

I had some ripe bananas that needed a little love, so into the kitchen they went! ❤️ This chocolate chip banana bread turned out soft, delicious, and full of those melty chocolate chips. 😋

I love finding ways to use what I have, save money, and keep good food from going to waste. 🌱
