recipe below ⬇️

but quite honestly I’m not a recipe girl…I just wing it!

here is the gist!

Fill a baking pan with chopped tomatoes, a pepper and onion if you wish as well

pour a container of cottage cheese over (or if you’re not trying to hit macros, a package or two of Boursin is amaaazing…I can see cream cheese slapping as well)

drizzle with olive oil, add garlic, and herbs (I often do a scoop of pesto but I was out) and bake at 400 for 45min or until everything is bubbly

Let cool for 15 min or so and then blend smooth.

Use immediately or freeze for later!

save for later when you’re drowning in tomato goodness!
