INGREDIENTS
For the Potatoes
• 700–800 g Yukon Gold potatoes
• 1 tsp salt (for boiling water)
• 1 tsp baking soda (for boiling water)
• Neutral oil, enough to lightly coat the baking tray
Garlic Parmesan Finish
• 2 tbsp unsalted butter
• 2–3 garlic cloves, finely minced
• ⅓ cup freshly grated Parmesan
• 1–2 tbsp fresh parsley, chopped
• ¼ tsp black pepper (optional)
• Salt, to taste
Creamy Lemon-Garlic Sauce
• ¼ cup mayonnaise
• ¼ cup thick plain Greek yogurt
• 1 small garlic clove, finely grated
• 1 tbsp fresh lemon juice
• ½ tsp honey
• ½ tsp yellow mustard
• ¼ tsp black pepper
• ¼ tsp salt
• 1 tbsp fresh parsley, finely chopped
INSTRUCTIONS
1. Preheat oven to 425°F (220°C). Lightly coat the bottom of a metal baking tray with neutral oil and place it in the oven to heat.
2. Peel the potatoes and cut into large, even chunks (about 4 pieces per medium potato).
3. Bring a pot of water to a boil. Add salt and baking soda, then add potatoes. Boil for 10–12 minutes, until just tender but still holding their shape.
4. Drain well, shake the colander to rough up the edges, and let the potatoes steam-dry for 3–5 minutes.
5. Carefully transfer potatoes to the hot, oiled tray. Turn to coat and spread in a single layer. Roast for 30 minutes without disturbing, then flip and roast another 15–25 minutes, until deeply golden and crispy.
6. Melt butter in a small pan. Add minced garlic and cook for 30–60 seconds, until fragrant. Don’t let it brown.
7. Toss the hot potatoes with garlic butter, Parmesan, parsley, black pepper, and salt to taste.
8. For the sauce, mix mayonnaise, Greek yogurt, garlic, lemon juice, honey, mustard, black pepper, salt, and parsley until smooth.
Serve immediately with the creamy lemon-garlic sauce for dipping. Enjoy! 🤍
