La "sauce béchamel" is a traditional sauce used in so many French dishes. I grew up with it, and it's one of my favourite sauces. Super creamy and super easy to make: butter, flour and milk. Yes, that's it.
When I stopped eating dairy, I had so many failed attempts because it kept tasting like thick, watery flour 🫠
A few days ago, I made meat-free lasagna using soya mince from Bon Vegan . Absolutely delicious! I soak it in water with soy sauce and liquid smoke, then use it just like ground beef 🤝
I decided to top my lasagna with béchamel sauce with a twist, and jeez, it was a good idea.
First, melt your margarine in a saucepan over medium heat and let it cook until it turns golden and develops a delicious nutty aroma. Keep an eye on it so it doesn't burn!
I usually do everything by eye, but for a classic béchamel, you can use 40 g margarine, 40 g flour and 500 ml liquid.
Add the flour to your golden margarine and whisk until you get a smooth paste. Cook for a minute or two, stirring constantly. Slowly pour in your liquid while whisking to prevent lumps. Traditionally, you'd use milk, but I replace it with water. Yes, really! Keep stirring over medium heat until the sauce thickens.
Add salt to taste and, if you like, a little ground cardamom.
But this time, I added a generous chunk of my own cashew cheese, "The Classic", available in my shop. And wow, I nearly ate a quarter of the sauce before it even made it onto the lasagna 🤣
I baked it until the top was golden. Absolutely delicious.
I'll definitely make this sauce again to eat with pasta.
Yes, just like when I was a kid: steamed cauliflower + béchamel sauce. Yum.
Save this recipe and let me know if you try it 😃
But have you ever tried béchamel sauce before ?
