It won't all be perfect, maybe not even any good, but I'm giving it a go.

Just when I was wondering what to have for lunch on this hot Saturday, I stumbled across this recipe on page. Inspired by the Mexican Esquite salad, I added some avo from the fridge and red onion, and had this with rotisserie chicken picked up from the market here in Spain. The perfect lunch. This was delicious. Fresh, summery, healthy, tasty. Tuna with courgette salsa and beans. Recipe landed in my inbox this morning from and I knew it was perfect for a hot, summer evening. I’ll post the link to her in my stories.

It’s been a while… I doubt anyone noticed though, not exactly a food influencer 😂… my favourite podcast has to be and this recipe had me drooling on my morning walk today. It was so good (and super quick) I had to take a pic to remind me to cook it again. I cooked the marinated salmon out on the balcony on my recently acquired Woodfire which I absolutely love for outdoor cooking. I’ll link to the recipe in my stories. Jim gave it 9/10 - when asked where I’d lost the pint, he said it was because he had to squeeze his own lime. 🍋‍🟩
