Cajun Chicken Butterfly

The crispiest Cajun chicken butterfly you can get! Trust me—this chicken doesn’t get any crispier than this. It’s a recipe to die for and so addictive. The extra hot naga sauce really kicks this chicken up a notch and elevates the flavour. 🔥🔥🔥🔥

Ingredients

Chicken:

* 6 chicken drumsticks
* 2 tbsp plain flour
* 1 tsp black pepper
* 1 tsp paprika
* 2 medium eggs
* 1½ cups breadcrumbs

Creamy Cajun Naga Sauce:

* 60g butter
* 5 fresh garlic cloves, minced
* 1½ tsp garlic powder
* 2 tsp paprika
* 1½ tbsp chicken seasoning
* 1 tsp black pepper
* 1½ tsp onion powder
* 1 tsp Italian seasoning
* 1½ tsp chilli flakes
* 1 tsp cayenne pepper
* 1 cup double cream
* Naga sauce (adjust to your preferred spice level)
* Spring onions, chopped (optional, for garnish)
* Oil for frying (or use an air fryer)

Method

1. Butterfly the drumsticks (watch the reel to see how it’s done).
2. Wash and pat the chicken dry.
3. Coat each drumstick in the seasoned flour, dip into the beaten eggs, then coat completely in the breadcrumbs.
4. Fry in oil over medium heat for about 10 minutes on each side, or until golden brown and cooked through.
5. In a separate pan, melt the butter and add the garlic along with all the dried seasonings. Stir for about 1 minute.
6. Pour in the double cream and cook until you reach your desired consistency.
7. Add the naga sauce to taste and cook for another minute.
8. Pour the sauce over the crispy chicken, making sure it’s well coated.
9. Garnish with chopped spring onions if desired, and enjoy!

Spicy Pulled Chicken Tacos 🌮🔥

These simple, spicy, saucy tacos are packed with flavour and incredibly easy to make. You have to try them! Watch the reel for the full cooking method. 🎥

Ingredients

Step 1: Taco Sauce

* 4 tomatoes, chopped
* Handful of fresh coriander
* 1 large red onion
* 4–5 garlic cloves
* 1 Scotch bonnet (optional)
* 1 tbsp paprika
* 2 tbsp chilli powder
* 2 tbsp olive oil

Step 2: Chicken Marinade

* 6 chicken fillets
* Taco seasoning (homemade or store-bought)
* 1 tbsp olive oil
* 3 tbsp olive oil (for frying)

Step 3: Filling

* ½ red pepper, julienned
* ½ green pepper, julienned
* Fresh coriander, chopped
* 1 tbsp taco seasoning (homemade or store-bought)
* 12 tortilla wraps
* Grated cheese (for filling)

Method

1. Add all the taco sauce ingredients to a food processor and blend until smooth. Set aside.
2. Slice the peppers into thin julienne strips and chop the coriander.
3. Wash the chicken and pat it dry.
4. Season the chicken with the taco seasoning and 1 tbsp olive oil.
5. Heat 3 tbsp olive oil in a pan over medium heat.
6. Cook the chicken for about 8 minutes per side, depending on the thickness, until fully cooked.
7. Transfer the chicken to a plate and shred it using two forks.
8. In the same pan, add the sliced peppers and taco seasoning (do not add the coriander yet). Cook for 1 minute.
9. Pour in the prepared taco sauce and simmer for 5–7 minutes.
10. Add the shredded chicken and stir until well coated.
11. Stir in the chopped coriander.
12. Spread a little sauce over one side of a tortilla.
13. Place the tortilla in a separate hot pan and cook for about 2 minutes until lightly crispy.
14. Add grated cheese, then spoon the chicken mixture onto one half of the tortilla.
15. Fold the tortilla over, press gently to seal, and cook until the cheese has melted.
16. Garnish with extra fresh coriander.

Serve hot and enjoy! 🌮✨

Ingredients

Step 1 – Marinade

* ½ kg chicken flat wings, washed and patted dry
* 1 cup buttermilk
* 1 egg
* 1 tsp all-purpose seasoning
* 2 tbsp hot sauce

Step 2 – Coating

* 1 cup plain flour
* ½ cup cornflour
* 1 tsp all-purpose seasoning
* 1 tsp black pepper
* 1 tsp garlic powder
* 1 tsp onion powder

Step 3 – Bang Bang Sauce

* 2 tbsp mayonnaise
* 2 tbsp sriracha sauce
* 2 tbsp sweet chilli sauce

Also needed:

* Oil for frying

Method

1. Wash and pat the chicken wings dry.
2. In a bowl, combine all the Step 1 ingredients. Mix well, add the chicken wings, and coat evenly.
3. Marinate in the refrigerator for at least 1 hour. For the best flavour, marinate for 4–5 hours.
4. In a separate bowl, mix all the Step 2 coating ingredients.
5. Remove the wings from the marinade and coat them thoroughly in the flour mixture.
6. Heat oil in a pan over medium heat. Fry the wings for 5–6 minutes per side, or until golden brown, crispy, and cooked through.
7. In a small bowl, mix together all the Step 3 ingredients to make the Bang Bang sauce.
8. Pour the sauce over the crispy wings and toss until evenly coated.

Serve immediately and enjoy!

Ingredients

Step 1: Prepare the Minced Meat Filling

* 250g minced meat
* 1.5 tsp oil
* 1 medium onion, diced
* 1 tsp garlic paste
* 1 tsp ginger paste
* Salt to taste
* 1/2 tsp turmeric powder
* 1/2 tsp garam masala
* 1.5 tsp chilli powder
* 1 tsp cumin powder
* 1 tsp curry powder
* Green chillies (as desired)
* Fresh coriander leaves

Method:

Heat a frying pan and add oil, chopped onion, and garlic. Mix well.
Add the minced meat and cook until it changes colour.

When the water starts to dry up, add salt and all the spices: turmeric powder, garam masala, chilli powder, cumin powder, and curry powder. Mix well.

Cook until the meat is fully cooked. Add green chillies and coriander leaves. Remove from the heat and let it cool.



Step 2: Prepare the Potato Mixture

* 4 potatoes, boiled and mashed
* 1/2 tsp chilli powder
* 1/2 tsp paprika powder
* 1 tsp cumin powder
* 1 tsp coriander powder
* 1 tsp chilli flakes
* Salt to taste
* 1 tsp black pepper
* 1 tbsp oil
* 1/2 red onion, diced
* Green chillies (as desired)
* Fresh coriander leaves

Method:

Boil the potatoes until soft. Once cooked, drain the water and mash them.

Add chilli powder, paprika powder, cumin powder, coriander powder, chilli flakes, salt, black pepper, oil, onion, green chillies, and coriander leaves.

Mix everything well with your hands.



Step 3: Assemble the Aloo Keema Tikki

Grease your hands with oil. Take some potato mixture and flatten it in your hand.

Place the minced meat filling in the centre, then close it carefully so the meat stays inside.

Crack eggs into a bowl. Dip each potato and meat tikki into the egg mixture, then fry.

Fry on medium heat for about 3 minutes on each side until golden brown.

Your delicious Aloo Keema Tikki is ready.

Mutton Chops Fry 🍖🔥

Easy to make, full of flavour, and absolutely delicious!

Ingredients

Marination:
◾️5 pieces of mutton chops
◾️1 tsp oil
◾️½ tsp black pepper
◾️½ tsp garam masala
◾️1 tsp cumin powder
◾️Salt to taste

Masala Base:
◾️1 onion (diced)
◾️1 tbsp fresh ginger
◾️Salt to taste
◾️3 bay leaves
◾️4 cardamoms
◾️1 cinnamon stick
◾️1 cup water
◾️1 tsp coriander powder
◾️1 tsp cumin powder
◾️½ tsp curry powder
◾️2 red onions (sliced)
◾️Fresh coriander
◾️Dried chilli (according to your spice level)

Method:

1. Wash the mutton chops and pat them dry.
2. Marinate with oil, black pepper, garam masala, cumin powder and salt.
3. Heat a pan and fry the chops for about 3 minutes on each side until nicely browned. Remove and set aside.
4. In the same pan, add onion, ginger, bay leaves, cardamom, cinnamon, salt and water. Cover and cook for about 15 minutes until the onion softens.
5. Add coriander powder, cumin powder, curry powder and garam masala. Cook for another 2 minutes.
6. Add sliced red onions and dried chilli. Cook for 1 minute only so the onions keep their texture.
7. Finish with fresh coriander.

Serve hot with rice and enjoy! 🍚✨

Dim Bhuna AKA Egg Curry 🍳🍛
A comforting dish with bold spices 🤤✨

Ingredients

🥚 Egg Marinade (Step 1)

* 9 free-range eggs
* Turmeric powder
* Chilli powder
* Pinch of salt
* 4 tbsp oil

🍛 Curry Base (Step 2)

* 3 bay leaves
* 1 tsp panch phoron
* 5 garlic cloves (grated)
* 2 small onions (mashed)
* ½ tsp turmeric powder
* 1 tbsp chilli powder
* 1 tsp cumin powder
* ½ tsp coriander powder
* 1½ tsp curry powder
* 1 tsp mixed masala
* 1 tsp salt
* 1 fresh tomato (diced)
* 5 green chillies (roughly chopped)
* 2½ cups boiling water
* Handful of fresh coriander (chopped)

Method

1️⃣ Boil the eggs for 10–12 minutes. Drain, rinse under cold water, peel, and make 5–6 vertical cuts on each egg.

2️⃣ Coat the eggs with turmeric, chilli powder, salt, and oil. Leave to marinate.

3️⃣ Heat a pan, add the eggs and cook for 2–3 minutes until blistered. Remove and set aside.

4️⃣ In the same pan, add bay leaves, panch phoron, and garlic. Cook until golden.

5️⃣ Add onions, cover with a lid, and cook until browned, stirring occasionally.

6️⃣ Once the onions separate from the oil, add all the spices. Cook well to remove the raw spice smell — this bhuna step is important!

7️⃣ Add tomatoes, green chillies, and salt. Once the masala starts drying, add 1 cup of boiling water. Cover and cook for 6–7 minutes.

8️⃣ Add the fried eggs, stir, and cook for 1 minute. Add the remaining 1½ cups of water, mix well, cover, and cook for another 5 minutes.

9️⃣ Turn off the heat and garnish with fresh coriander 🌿

Serve hot with rice 🍚✨

Chicken Malai Kebab

Creamy, rich, and incredibly flavorful! Once you try this Chicken Malai Kebab, you’ll want to make it again and again. Perfect served with warm naan or paratha.

Ingredients

Step 1: Grill the Kebabs

* 6 charcoal chicken kebabs, cut into bite-sized pieces

Step 2: Marinade

* 5 tbsp natural yogurt (add more if you prefer extra sauce)
* Green chilli, finely chopped (to taste)
* 1½ tsp cumin powder
* 1½ tsp garam masala
* A handful of fresh coriander, chopped

Step 3: Base

* 3–4 garlic cloves, minced
* 1 tbsp ginger, minced
* 1 small onion, diced
* 3–4 green chillies, sliced
* ½ green bell pepper, diced
* Salt, to taste
* 1–2 tbsp oil

Step 4: Finish

* 1 tbsp ghee
* 1 tsp black pepper
* ½ cup fresh cream
* Fresh coriander for garnish

Method

1. Cut the chicken kebabs into bite-sized cubes and grill at 205°C (400°F) for about 3 minutes. Set aside.
2. In a bowl, combine the yogurt, chopped green chilli, cumin powder, garam masala, and coriander. Blend into a smooth paste if you prefer a silkier, more aromatic sauce.
3. Add the grilled kebab pieces to the marinade and leave to marinate for 10–15 minutes.
4. Heat oil in a pan over medium heat. Add the garlic, ginger, onion, green chillies, and green bell pepper. Season with salt and sauté until the onions are golden brown.
5. Add the marinated kebabs along with all the marinade to the pan. Cook for 2–3 minutes.
6. Stir in the ghee, black pepper, fresh cream, and chopped coriander. Cook for 1 more minute, then switch off the heat.
7. Serve hot with fresh naan or paratha.
