Understanding the Fève: A Key to French Pastry Culture
To understand French pastry, you must understand its traditions — and the fève is one of the most revealing.

Hidden inside the Galette des Rois, the fève is a small object with ancient origins. Long before puff pastry existed, beans were used in cakes to randomly select a “king” during winter celebrations. This ritual survived and became part of the Epiphany tradition.

Over centuries, the fève evolved. Real beans were replaced by porcelain figurines. These figurines became more detailed, more symbolic, and eventually collectible.
Today, every Galette des Rois contains a fève, but not all fèves are equal. Artisan bakers and pastry chefs often choose or design specific models that reflect their identity or values.

The ritual of sharing the galette — cutting it, assigning slices blindly, discovering the fève — is as important as the recipe itself. It teaches something essential about French food culture: pastry is not only technique, it is transmission.

🐣✨ Why do we eat chocolate eggs at Easter? And what’s with the bells? Let’s unwrap the history behind this sweet tradition…

Before Easter became a Christian celebration, people across Europe already welcomed spring with festivals honoring rebirth and new life. 🌱 Over time, those ancient customs blended with religious traditions—and voilà, Pâques was born in France.

Here’s the story in a few bites:
🍃 Pagan beginnings
Easter has roots in spring festivals celebrating fertility and renewal. The egg was already a strong symbol of life long before it became chocolate.

⛪ Christian traditions
In the Middle Ages, eggs were forbidden during Lent. So by Easter, people had plenty—they boiled and decorated them to give as gifts. The egg became a symbol of resurrection.

🍫 Birth of the chocolate egg
The first chocolate eggs appeared in 18th-century France. Early versions were bitter and solid, but with time and technique, they became hollow, sweet, and beautifully designed. French chocolatiers turned them into edible art!

🔔 Why bells, not bunnies?
In France, it's not the Easter Bunny—it’s the flying bells (les cloches volantes) that bring treats! Legend says church bells fly to Rome on Good Friday and return Easter Sunday, dropping chocolate along the way.

🥚 Egg hunts and joyful traditions
In gardens across France, children go on egg hunts (chasses aux œufs)—a tradition inspired by 16th-century Germany, where a mythical hare hid eggs for children to find.
