Starting the morning with a tropical treat 🥭🥥 🫐

Exotic fruit smoothie mix blended with coconut yoghurt, oats, flaxseeds, and turmeric.

Topped with a ginger biscuits and stem ginger crumble, passion fruit, and blueberries.

It’s not just delicious but actively mood improving. People who consume more fruit and veg each day are generally happier and have higher life satisfaction. Even if controlled for lifestyle like exercise, income, body weight etc which indicates the happiness is likely to be associated with the fruit veg consumption as it isn’t explained by other health behaviours.

How? Vitamin C helps us to produce dopamine, and the antioxidants help us to experience more eudaemonia - the feeling of wellbeing 🥰

Cooking for non-vegans can be easier than cooking for vegans.

How so? Well vegans are typically pretty experienced cooks, with their own repertoires. And so, the pressure is on to present a show-stopper!

This six veggies and apricot bunny chow worked a treat. I’ve made it once before but I can’t remember if I made it in the traditional bread bun ‘bowl’. And I definitely didn’t add apricots. Anyway, it was delicious.

Flavoured with garlic, ginger, chillies, garam masala, ground cumin, turmeric, cinnamon, and coriander, and 5 curry leaves. The filling was onion, tomatoes, carrots, sweet potatoes, cauliflower, peppers, dried apricots, apricot jam, and dressed with lemon juice and fresh coriander.

To eat you basically just break off a piece of bread and scoop up the veggie curry inside. It’s definitely one for sharing with good friends.

Fabulous! And pretty nutritious too 👌 🌱

Travelling round Scotland is not all blue skies, sparkling seas, and splendid views. Sometimes it’s a car park picnic ‘tuna’ crunch roll made on the tarmac.

The tuna crunch was great though - Squeaky Bean ‘tuna’ flakes with Hellman’s Garlic mayo, diced peppers and deseeded, diced cucumber. Rolls were granary and from I directed my in-laws there today but didn’t realise they weren’t open - disappointment all round - next time… the rolls and breads are as delicious as the cakes and Mr VFT did think they were worth getting up early on a Saturday and driving through all 2.5 hours for!

Home now and enjoying having a ‘proper’ kitchen, not preparing meals on the ground, and delighting in the luxury of a proper ‘food shop’. All planned and organised - just how I like it 🥰

If you’re ever in Oban you HAVE to try 👌

Cakes, biscuits, pastries, hogless rolls, breads, and fantastic sandwiches - all vegan - all excellent 🥰

Best part, I’d wager most of the people queueing along the street don’t know it’s vegan, it’s not singing it’s veganness, which makes sense, attracting non-vegan customers saving all those animals, and educating people on just how fantastic great vegan food can be!

We bought: a Victoria sponge danish, a passion-fruit and strawberry cinnamon bun with pistachio, a maple pecan cinnamon roll, and a raspberry and lemon cruffin. Mr VFT also polished off a sausage and chutney hogless roll.

It’s all just too good - and not overly sweet 🥰 Even I was tempted…

We hijacked the drying green of Colonsay House for our rustic picnic yesterday. We managed to pick up the last loaf in the wee shop and, without a knife, I tore it up for sarnies with plant-based Philadelphia and Quorn smoky ham slices. In the sunshine, listening to the birds, it was fine dining 🥰

The gardens were a peaceful dream, unkempt by manicured standards but filled with sub-tropical plants, birds, and echoing with the call of the cuckoo.

Bit of a change of kitchen from our campervan, but we were not allowed him on the Isle of Colonsay, so we glamped! And we loved it 🥰

I had made a curried chickpea sandwich filling for our on-the-go lunches with almond butter, tamari, roasted chickpeas and red chillies, cumin, smoked paprika, a dash of oat milk and a squeeze of lemon. Which had been delicious on ‘everything’ bagels and in pittas.

As a wee change, though, I heated it up with some crosta mollica flatbreads and we ate it in the 21 degrees heat!

I can highly recommend the bell tents at proper luxury, and look at that view 👌

A Hebridean Hello from me!

A golden mango, turmeric, coconut, and chia pudding breakfast for us this fine morning.

We needed it as we were up at the crack of dawn to make the low tide for the crossing to Oronsay, a remote RSPB reserve in the Inner Hebrides.

A very deep ‘paddle’ was involved and we were glad of our protein breakfast: frozen mango mixed with tinned coconut milk, maple syrup, turmeric, vanilla, seq salt and chia seeds.

Of course I’d prepped ahead of time. Jam jars prepped with chia, vanilla, turmeric, and maple and just awaiting the coconut milk and defrosted mango.

A nutrient rich mix for an effortful hike, a wade across a deep tidal stream, and a glorious Hebridean early morning 🌅

Fabulous vegan meal at the Pierhouse at Port Appin celebrating my Mum’s belated 80th birthday.

Fine wine, whisky’s, and decent vegan scran: beetroot and apple tart followed by a sea buckthorn sorbet with hazelnut crumble.

I took my beautiful colleague out for lunch to thank her for being thee best office mate and colleague. Kind, supportive, and caring, she has the heart of a lion, mastered the art of a well-placed swear word, and entertains me endlessly with just the right amount of completely irreverent humour. I don’t know what I’d do without her 🥰

Oh and I had okonomiyaki fries and she had tempura oyster mushrooms with kewpie mayo and both had pickled ginger 😋 👌

In its honour we had a yellow (ish) curry with crispy tofu, jasmine rice, scallions, peanuts, coriander, chilli oil drizzle, and lime 🍋‍🟩 🍛

So fresh, delicious, and vibrant.

I’m ashamed to say I forgot it was No Meat May!! A great initiative like VEGANUARY to encourage people to give plant based living a try. And when they do, their results show that their fruit and veg intake increases by 38%, their legumes and pulses rise by a whopping 67%, and their intake of nuts and seeds by 57% all of which tends to help them feel better, and keep going…

So much so, their report indicates that 50% of all Brits will have ditched meat altogether by 2040!

We can but hope 🤞
