🌽 Battered Sweetcorn

This is the proper takeaway version — light, crispy batter with sweet bursts inside. Perfect on its own or turned into salt and chilli sweet corn 🌽

Ingredients

* 1 tin sweetcorn (drained very well)
* 4 tbsp plain flour
* 2 tbsp cornflour
* ½ tsp baking powder (this makes it light and crispy)
* Pinch of salt
* Cold water (to make batter)

🧑‍🍳 Batter (key step)

Mix the plain flour, cornflour, baking powder, and salt together.

Add cold water slowly until you get a thick coating batter. It should be similar to double cream, not runny.

“Fold the sweetcorn through” means gently mixing the sweetcorn into the batter so every piece is coated without mashing it.

Frying (this is where most go wrong)

Heat oil to 180°C.

Spoon small clusters into the oil. Do not add everything at once.

Fry for 2–3 minutes until golden and crispy, then remove and drain.

For extra crispiness, fry again for 30–60 seconds. This is a real takeaway trick 👌

🧐 Funny thing I hear all the time:

“I can’t use MSG because I’m allergic to it, so I use Maggi instead.”

Yet one of the main flavour-enhancing ingredients in Maggi Liquid Seasoning is MSG.

I’m not saying everyone should eat MSG. If you genuinely have a medical reason to avoid it, that’s your choice.

But many people have been told MSG is the problem while happily using products that contain MSG or ingredients that work in a very similar way.

The reality is that MSG is found in countless foods people eat every day without a second thought. Crisps, stock cubes, seasoning mixes, sauces, instant noodles and products like Maggi have been using it for decades because it boosts savoury flavour.
