The pork belly goes on before you even arrive. By the time you sit down, it has had hours over the fire.

The Fire Master Experience, for those wanting to take it to the next level, is for people who have cooked over fire before. Four techniques in one day: hanging, asado, rotisserie and planking.

Pork belly hung over the fire. Beef short ribs low and slow on the asado. Picanha skewers on a campfire rotisserie. Planked salmon. Plus a knife sharpening demo with Alex and chicken skewers off the fire.

Seven Fridays in 2027 from 26 March. 20 places on each. £160. At our woodland in Kent.

I’ll never not enjoy this part!

After doing a full demo on stage at a food festival everyone charging in to get a bit of my fire cooked food.

This is why I love using my new Meta glasses for filming my content and letting people see my POV from stage.

Last night the sky over Tonbridge was full of fireworks. Down on the ground, the queue was for our fire.

Hot food, cold hands and the same question over and over: how do you cook like that?

Honestly, it starts with learning to light a fire properly, then cooking on the embers, not the flames. That's exactly what our Fire Starter experience teaches complete beginners.

Smash burgers you make from scratch for lunch. Asado style pork belly, whole chickens, reverse seared tomahawk steaks and fire hung pineapple for the feast.

Seven Fridays in 2027 from 19 March. 20 places on each. £160. At our woodland in Kent.

Who doesn’t love a big bowl of smoky, pulled chicken chilli?!

This one is an absolute belter, and it’s packed with flavour, protein and plenty of goodness!

Pulled chicken & black bean chilli, cooked over real fire on the Kadai over Big K Charcoal.

And we’re building some serious flavour into this one before it even hits the pot!

First up, we’re cooking our veggies DIRTY, straight in the glowing embers, getting that beautiful char and smokiness into them.

Next, the chicken goes onto the grill, picking up some gorgeous colour and a proper kiss of wood smoke.

Then everything goes into the pot with our black beans, tomatoes and spices, slowly stewing away until the chicken is beautifully tender and ready to pull apart.

The result?

Rich. Smoky. Hearty. Absolutely delicious!

This is exactly the sort of food I love cooking for the family during the colder months.

It’s nutritious, filling, packed with protein and perfect for making a big batch to sort out lunches throughout the week.

And the best bit?

You can easily recreate this in your kitchen, although getting that extra layer of smoke and char from the fire takes it to another level!

Serve it with fluffy rice, load it into a jacket spud or just grab a big bowl and get stuck in!

Now tell me… how do you like your chilli? Mild and smoky or hot enough to blow your bloody head off?

POV: You offer a crowd some freshly cooked steak…

And suddenly everyone’s your best mate! 😂

One thing I’ve learnt from cooking live on stage at food festivals is that EVERYONE loves a bit of steak!

Especially when it’s been sizzling away over the flames on the Kadai

This time I thought I’d give you a different view of the action, filming through my Meta glasses so you can see exactly what I see when I’m cooking and feeding the crowds.

On the menu?

Steak & eggs brunch! 🥩🍳

Beautifully seared steak, perfectly cooked eggs and a crowd of hungry people ready to get stuck in!

There’s nothing I love more than cooking live, sharing the food and watching people’s reactions when they take that first mouthful.

The smells draw them in, the flames get their attention, but it’s the flavour that keeps them coming back!

And judging by how quickly everyone tucked into this one, I reckon it was a winner! 😂

Now tell me… how do you like your steak cooked? Rare, medium rare or well done? 👇

Who said eating healthy means eating small portions?!

This one is an absolute banger, and trust me, you won’t be leaving the table hungry!

Slow cooked beef ragu & ember cooked jacket spuds!

We’re talking a rich, hearty beef ragu bubbling away over the flames on the Kadai while our jacket potatoes cook dirty, nestled straight into the glowing Big K Charcoal. lumpwood embers.

Beautifully soft and fluffy on the inside, with that gorgeous smoky skin on the outside.

Then we split those spuds open and pile on a generous helping of that delicious beef ragu.

Proper comfort food, cooked over real fire!

Now here’s the beauty of this one…

I’ve used 5% fat steak mince, which means we’re keeping the calories down without sacrificing all that incredible flavour.

And you know what that means?

Bigger portions! 💪

I’m a big believer that eating well shouldn’t mean tiny meals, bland chicken or feeling hungry an hour later.

Good ingredients, sensible choices and food that actually fills you up.

This is an absolute winner for a midweek family dinner, and it’s just as good portioned up for lunches throughout the week.

One pot of ragu, a load of jacket spuds and you’ve got several cracking meals sorted.

Now tell me… are you loading your jacket potato with beef ragu, or are you sticking with the classic beans and cheese?
