So we made a track. 🎸

🌶️🐟 Hot or not?

This one started with a reel from . Just a slow pan across a beautifully plated dish with a piece of fish sitting in a gorgeous red curry sauce.

No recipe.
No method.
Just beautifully plated food that made us think...

That looks good.

So Nutty went into the kitchen and had a play.

Thai red curry paste, coconut milk, lemongrass, kaffir lime, oyster sauce, white fish...

And a little bit of:

Let's see what happens.

Turns out, quite a lot happens. 😋

There isn't a recipe for this one on Nutty's Kitchen. Not yet, anyway.

This was one of those cooks where you trust the ingredients, taste as you go, and let the pan do its thing.

🧪🎂 **Baking is an art.**

And we probably need a few lessons in the finishing department... 😂

**But you gotta start with the goods.**

My tech guy says...

**“If you measure it, you can control it.”**

Our oven was set to **180°C**.

The thermometer said **220°C**.

**We had an erupting Volcano!** 🌋😂

So… if we measure it,
we can control it.

**Trust him!** 😏

**At least now we know what 180°C actually looks like!** 😂

Then…

**Straight from the jar — Bramley apple sauce.** 🍏

**The same stuff you put on your roast pork?**

Exactly! 😄

That's my little hack for this Victoria sponge.

**Good ingredients.
Right temperature.
Dodgy decorating.** 😂

🔥 THIS IS A SERIOUSLY HOT CURRY 🔥

Consider yourself warned.

This one brings some serious heat, so Nutty had a cunning plan...

Macaroni pie. 😏

Because when your curry is seriously kickin', you need something to calm things down and make all that glorious fire a little more manageable.

Plain rice will help.

But macaroni pie?

Now we're talking. 😂

This is one seriously satisfying curry — hot, fragrant, full of flavour and definitely not one for the faint-hearted.

Some things just feel like home. ❤️

Some things take a little time.

Rich, deeply savoury steak and ale gravy, whole shallots and mushrooms soaking up all those wonderful flavours, buttery puff pastry... and time to let everything come together.
