JOLLOF RICE RECIPE

Ingredients:
• Rice
• Beef or any protein of your choice
• Jollof pepper mix
• Tomato paste
• Cooking oil
• Onions
• Peppers
• Curry powder
• Thyme
• Rosemary
• Garlic
• Seasoning cubes/powder
• Salt
• Maggi Signature Jollof
• Spicity Jollof seasoning
• Butter (optional)
• Bay leaves
• Meat stock

1. Wash your beef thoroughly and place it in a pot. Add seasoning, salt, curry, thyme, rosemary, garlic, ginger, pepper, and chopped onions. Mix well, cover, and cook on low heat for 15 minutes to allow the meat to release its natural juices.

2. After 15 minutes, add enough water to the pot and cook the meat until it’s tender.

3. Once fully cooked, remove the meat from the stock and fry until golden brown. Set aside.

4. In a clean pot, heat up cooking oil. Add sliced onions, curry, thyme, and bay leaves. Sauté gently to release the aroma and flavours.

5. Stir in the tomato paste and fry thoroughly until the sour taste is gone.

6. Add your jollof pepper mix along with seasoning cubes, Maggi Signature Jollof, and Spicity Jollof. Mix well and allow it to fry properly well.

7. Once the stew is well fried, pour in the meat stock and add enough water to cook the rice and bring to a boil.

8. Taste and adjust seasoning if needed. Add washed rice (not parboiled, wash with hot water). Stir to combine evenly, cover, and let it cook on low heat. We

9. Check occasionally and stir gently to prevent burning. Keep the heat low and allow it to cook until the rice is fully done.

10. When the rice is cooked, add some sliced onions and a little butter (if desired). Stir well, cover the pot, and let it simmer for a few more minutes.

11. Your delicious jollof rice is ready! Serve hot with your fried beef or choice of protein.

Classic Butter Croissants

Ingredients

Dough
• 4 cups all-purpose flour (500 g)
• 1/4 cup sugar (50 g)
• 2 1/4 tsp instant yeast (7 g)
• 1 1/2 tsp salt
• 1 cup warm milk (240 ml)
• 1/4 cup warm water (60 ml)
• 2 tbsp butter, softened (30 g)

Butter Layer
• 1 1/4 cups unsalted butter (280 g)

Egg Wash
• 1 egg
• 1 tbsp milk

Instructions

Prepare the dough
1. Mix flour, sugar, yeast, and salt.
2. Add warm milk, warm water, and softened butter.
3. Knead until smooth and elastic.
4. Cover and chill for 1–2 hours.

Prepare the butter block
1. Place butter between parchment paper.
2. Roll into a flat rectangle.
3. Refrigerate until firm but flexible.

Laminate the dough
1. Roll dough into a large rectangle.
2. Place butter block in the center.
3. Fold dough over the butter like an envelope.
4. Roll out gently and fold into thirds.
5. Chill for 30 minutes.
6. Repeat rolling and folding 3 times total, chilling between folds.

Shape the croissants
1. Roll dough into a large thin rectangle.
2. Cut into triangles.
3. Roll each triangle tightly from the wide end to the tip.
4. Curve slightly into crescent shapes.

Proof
1. Arrange on baking trays.
2. Cover loosely and let rise until puffy, about 1–2 hours.

Bake
1. Brush with egg wash.
2. Bake at 200°C (400°F) for 18–22 minutes until deep golden brown.

Tips for Perfect Croissants
• Keep the butter cold at all times.
• Chill dough whenever it becomes soft.
• Do not overproof or butter may leak.
• Use high-quality butter for richer flavor and flaky layers.

Ingredients

* 2 chicken breasts, pounded to even thickness
* 100 g all-purpose flour
* 1 tsp paprika
* 1 tsp garlic powder
* 1/2 tsp cayenne pepper
* Salt and black pepper, to taste
* 1 egg, beaten
* 2 tbsp milk
* Vegetable oil for frying
* 2 burger buns, toasted
* 2 leaves of lettuce
* 2 slices of tomato
* 2 slices of cheddar cheese
* Optional: mayonnaise or spicy sauce

Instructions

1. Mix flour, paprika, garlic powder, cayenne, salt, and pepper in a bowl.
2. In another bowl, whisk egg and milk together.
3. Dip chicken into the egg mixture, then coat with the seasoned flour.
4. Heat oil in a pan over medium heat and fry chicken for 5-7 minutes per side, until golden and cooked through.
5. Toast the burger buns lightly.
6. Assemble burgers: place lettuce on the bottom bun, add fried chicken, cheese, tomato, and optional sauce.
7. Cover with the top bun and serve hot.

Garlic Butter Chicken Bites with Linguine Pasta Recipe 🍗🍝

Ingredients:

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
8 oz (225g) linguine pasta
3 tablespoons butter, divided
4 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon paprika
Salt and pepper, to taste
1/2 cup (120ml) chicken broth
1/2 cup (120ml) heavy cream
1/2 cup (50g) grated Parmesan cheese
Fresh parsley, chopped, for garnish

Directions:

Cook the linguine pasta according to the package instructions. Once done, drain and set it aside, but don’t forget to save 1/2 cup of the pasta water!

Season the chicken bites with salt, pepper, paprika, and Italian seasoning, giving them a flavorful coat.

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the seasoned chicken bites and cook for 6-8 minutes, stirring occasionally, until they’re golden brown and fully cooked. Once done, remove the chicken from the skillet and set it aside.

In the same skillet, add the remaining 1 tablespoon of butter and the minced garlic. Sauté for 1-2 minutes until the garlic becomes fragrant, filling your kitchen with delicious aromas.

Pour in the chicken broth and let it simmer for 2-3 minutes, allowing it to reduce slightly and concentrate the flavors.
Stir in the heavy cream and Parmesan cheese, letting it simmer for another 2 minutes until the sauce thickens and becomes creamy.

Add the cooked linguine and chicken back into the skillet. Toss everything together, making sure the pasta and chicken are coated in that rich, creamy garlic butter sauce. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it up.

Garnish with fresh parsley for a burst of color and flavor, then

serve immediately for a comforting meal!

1 yellow bell pepper, chopped
1 small onion, diced
300g baby potatoes
200g green beans 🌿
2 cups cooked white rice
3 garlic cloves 🧄, minced
3 tbsp honey
3 tbsp soy sauce
1 tbsp butter
1 tsp paprika
Salt and black pepper to taste
Fresh parsley for garnish

Instructions:

Preheat oven to 220°C / 425°F. Toss potatoes with oil, salt, and paprika. Roast for 25–30 minutes until golden.

Cook rice according to package instructions and steam the green beans until tender-crisp.
Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until cooked through.
