JOLLOF RICE RECIPE
Ingredients:
• Rice
• Beef or any protein of your choice
• Jollof pepper mix
• Tomato paste
• Cooking oil
• Onions
• Peppers
• Curry powder
• Thyme
• Rosemary
• Garlic
• Seasoning cubes/powder
• Salt
• Maggi Signature Jollof
• Spicity Jollof seasoning
• Butter (optional)
• Bay leaves
• Meat stock
1. Wash your beef thoroughly and place it in a pot. Add seasoning, salt, curry, thyme, rosemary, garlic, ginger, pepper, and chopped onions. Mix well, cover, and cook on low heat for 15 minutes to allow the meat to release its natural juices.
2. After 15 minutes, add enough water to the pot and cook the meat until it’s tender.
3. Once fully cooked, remove the meat from the stock and fry until golden brown. Set aside.
4. In a clean pot, heat up cooking oil. Add sliced onions, curry, thyme, and bay leaves. Sauté gently to release the aroma and flavours.
5. Stir in the tomato paste and fry thoroughly until the sour taste is gone.
6. Add your jollof pepper mix along with seasoning cubes, Maggi Signature Jollof, and Spicity Jollof. Mix well and allow it to fry properly well.
7. Once the stew is well fried, pour in the meat stock and add enough water to cook the rice and bring to a boil.
8. Taste and adjust seasoning if needed. Add washed rice (not parboiled, wash with hot water). Stir to combine evenly, cover, and let it cook on low heat. We
9. Check occasionally and stir gently to prevent burning. Keep the heat low and allow it to cook until the rice is fully done.
10. When the rice is cooked, add some sliced onions and a little butter (if desired). Stir well, cover the pot, and let it simmer for a few more minutes.
11. Your delicious jollof rice is ready! Serve hot with your fried beef or choice of protein.
