Slow-roasted lamb shoulder glazed with garlic, honey, and whole-grain mustard, served with roasted pearl onions and fresh thyme💓🌲
Ingredients
For the lamb:
- 1 lamb shoulder (bone-in, approx. 2-3kg)
- 6-8 garlic cloves, minced
- 3 tbsp honey
- 3 tbsp whole-grain mustard
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp soy sauce (optional, for extra umami)
- 1 tbsp fresh thyme leaves, plus extra for garnish
- Salt and freshly ground black pepper
For the roasted pearl onions:
- 15-20 pearl onions, peeled
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
For the sauce:
- 1 cup lamb or chicken stock
- 1 tbsp cornflour (optional, for thickening)
- Juices from the roasted lamb
Instructions
1. Prepare the Lamb
1. Preheat your oven to 160°C (320°F).
2. In a small bowl, mix the minced garlic, honey, whole-grain mustard, olive oil, balsamic vinegar, soy sauce (if using), thyme, salt, and pepper into a paste.
3. Rub the paste generously all over the lamb shoulder, ensuring it’s evenly coated.
2. Roast the Lamb
1. Place the lamb in a large roasting dish and cover tightly with foil.
2. Roast in the oven for 3-4 hours, depending on the size of the lamb shoulder. Baste the lamb with its juices every hour.
3. Prepare the Pearl Onions
1. Toss the peeled pearl onions in olive oil, balsamic vinegar, salt, and pepper.
2. After 2 hours of roasting the lamb, add the seasoned onions to the roasting dish around the lamb.
3. Remove the foil for the last hour of roasting to allow the lamb and onions to caramelize.
4. Make the Sauce
1. Once the lamb is cooked and tender (it should easily pull apart with a fork), transfer it and the onions to a serving dish.
2. Pour the juices from the roasting pan into a small saucepan. Skim off excess fat, then add the lamb or chicken stock.
3. Bring the mixture to a boil, and if you want a thicker sauce, mix 1 tbsp of cornflour with 2 tbsp water, then stir it into the boiling sauce. Simmer until thickened.
5. Serve
1. Drizzle the sauce over the lamb and onions.
2. Garnish with fresh thyme leaves.
3. Serve with your choice of sides, such as roasted vegetables, mashed potatoes, or crusty bread.
