Mexican Rice Homestyle

Ingredients:
- 1 cup boiled white rice.
- 2 cups water
- 1 tablespoon oil
- 1 small onion, diced
- 5 cloves garlic, minced
- 1 cup finely diced tomatoes
- 1 teaspoon cumin powder
- 1 teaspoon red chilli powder
- Sweet corn as per your liking
- Finely diced carrots
- Finely chopped mushrooms
- Finely chopped bell pepper ( can include all 3 coloured bell pepper)
- Finely chopped cabbage
- 1 Tablespoon of Rajma boiled
- Salt and pepper, to taste
- Optional: chopped green coriander or grated cheese for garnish

Instructions:
1. Heat oil in a pan, stir-fry onion and garlic until softened.
2. Add diced vegetables and saute, add the tomatoes and boiled raajma, cumin, red chilli powder,( chilli flakes optional) salt, and pepper. Garlic seasosing powder optional Stir well.
3. Add the boiled rice, cook for 2-3 minutes.
4. Fluff with a fork, garnish.
Garnish with grated cheese and if possible bake for 3 mins for the cheese to melt.Optinal garnish with spring onions .
For non veg members ingredients like cooked chicken small dices can be added at the time of sauteing veggies and chicken together in the flow of the recipe.

*Ingredients:*

For the Onion Tomato Mix:

- 1 tablespoon oil
- 1/2 cup finely chopped onions
- 1/2 cup diced tomatoes
- Spices (unspecified, adjust to taste)

For the Egg Mix:

- 2 eggs
- Salt (to taste)
- 1 teaspoon oil

Other:

- 2 banana leaves or butter paper squares (approx. 6-8 inches)
- 1/4 cup grated cheese
- 1/2 teaspoon masala
- 1 boiled egg, chopped

*Instructions:*

1. *Prepare the Onion Tomato Mix:* Heat oil in a pan over medium heat. Sauté chopped onions and diced tomatoes with spices until the onions are softened. Set aside.
2. *Prepare the Omelette:* Whisk eggs, salt, and oil in a bowl. Cook into a thin omelette in a pan.

Chicken Zam Zam Biryani
Here's a simplified recipe:

Ingredients:

For the marinade:
- 1 pound boneless chicken
- 1/2 cup yogurt
- 2 tablespoons ginger-garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric
- 1/2 teaspoon red chili powder
- Salt, to taste
- 2 tablespoons lemon juice

For the rice:
- 2 cups basmati rice
- 4 cups water
- 1 tablespoon ghee or oil
- 1 teaspoon cumin seeds
- 1 teaspoon salt

For the biryani masala:
- 2 tablespoons ghee or oil
- 1 onion, finely chopped
- 2 cloves
- 1 cinnamon stick
- 1 bay leaf
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1/2 teaspoon cardamom powder
- 1/2 teaspoon cinnamon powder

Instructions:
1. Marinate the chicken in the mixture of yogurt, ginger-garlic paste, cumin powder, coriander powder, turmeric, red chili powder, salt, and lemon juice for at least 30 minutes.
2. Cook the basmati rice with ghee or oil, cumin seeds, and salt until it's 70% done. Drain the water and set aside.
3. In a pan, heat ghee or oil and sauté the chopped onion until golden brown. Add the marinated chicken and cook until it's tender.
4. In a separate pan, heat ghee or oil and add cumin seeds, coriander seeds, cloves, cinnamon stick, bay leaf, cardamom powder, and cinnamon powder.
5. Layer the cooked rice, chicken mixture, and biryani masala mixture in a pot or handi. Cover it with a lid and cook on low heat for 10-15 minutes.
6. Serve hot.

This recipe makes 4-6 servings. You can adjust the spices according to your taste preferences. Enjoy your Chicken Zam Zam Biryani!

Classic Chicken Pie:
Ingredients

For the Pie Crust

2 ½ cups all-purpose flour

1 cup (230g) unsalted butter (cold, diced)

4-6 tbsp ice water

½ tsp salt

Egg wash (1 egg beaten with 1 tbsp milk)

For the Chicken Filling

500g (1 lb) chicken breast or thighs (boneless, diced)

2 tbsp olive oil

1 medium onion, finely chopped

2 garlic cloves, minced

1 carrot, diced

1 celery stalk, diced

½ cup frozen peas

1 cup mushrooms, sliced (optional)

2 tbsp butter

2 tbsp all-purpose flour

1 ½ cups chicken stock

½ cup milk or cream

1 tsp thyme (fresh or dried)

1 tbsp parsley, chopped

Salt and pepper to taste
Steps to Prepare

Step 1: Prepare the Pie Crust

1. Mix Dry Ingredients: Combine flour and salt in a mixing bowl.
2. Incorporate Butter: Add the cold diced butter and use a pastry cutter or your fingers to rub the butter into the flour until it resembles coarse breadcrumbs.
3. Add Ice Water: Gradually add ice water, 1 tbsp at a time, kneading it gently until the dough comes together. Don't make it soft it needs to be hard.

4. Chill the Dough: Divide the dough into two discs, wrap them in cling film, and refrigerate for at least 30 minutes.
Step 2: Cook the Chicken Filling

1. Cook Chicken: Heat olive oil in a skillet over medium heat. Add diced chicken and cook until lightly browned. Remove and set aside.

2. Saute Vegetables: In the same skillet, add more oil if needed. Sauté onions, garlic, carrots, celery, and mushrooms until softened.
3. Make a Roux: Stir in butter and let it melt. Add flour and stir well. Cook for 2 minutes to remove the raw taste of the flour.

4. Add Liquid: Gradually pour in chicken stock while whisking constantly to avoid lumps. Stir in milk or cream to make a thick sauce.
5. Combine Ingredients: Return the chicken to the skillet. Add peas, thyme, parsley, salt, and pepper. Simmer for 5 minutes. Allow the filling to cool completely.
Step 3: Assemble the Pie

1. Preheat Oven: Preheat your oven to 200°C (400°F).

2. Roll Out Crust: Roll out one dough disc on a floured surface. Line a pie dish with the dough, trimming any excess.

3. Add Filling: Pour the cooled chicken filling into the crust.

4. Top Crust: Roll out the second dough disc and place it over the filling. Trim and crimp the edges to seal.
5. Vent and Brush: Cut small slits in the top for steam to escape. Brush with egg wash for a golden crust.
Step 4: Bake the Pie

Paneer Steak Sizzler with Mashed Potatoes, Sautéed Vegetables, French Fries, and Brown Sauce.

Ingredients:

For Paneer Steak:
Two large (1-inch thick) paneer slices; 1 teaspoon red chili powder; ¼ teaspoon turmeric powder; ½ teaspoon garam masala; 1 teaspoon lemon juice; 1 teaspoon ginger-garlic paste; salt to taste; 2 tablespoons oil.

For Mashed Potatoes:
Two large potatoes; 2 tablespoons butter; ¼ cup milk; salt to taste; ½ teaspoon black pepper powder.

For Sautéed Vegetables:
1 cup broccoli florets; ½ cup julienned carrots; ½ cup green peas; 1 teaspoon finely chopped garlic; 1 tablespoon butter; salt and pepper to taste.

For French Fries:
Two large potatoes, cut into sticks; oil for deep frying; salt to taste.

For Brown Sauce:
2 tablespoons butter; 2 tablespoons all-purpose flour; 1 cup vegetable stock or water; 1 teaspoon soy sauce; 1 tablespoon tomato ketchup; 1 teaspoon Worcestershire sauce (optional); ½ teaspoon black pepper powder; salt to taste.

Preparation:

Step 1: Marinate the Paneer. Combine red chili powder, turmeric powder, garam masala, lemon juice, ginger-garlic paste, and salt with a small amount of water to create a paste. Evenly coat the paneer slices with this marinade and allow to rest for 20 minutes.

Step 2: Prepare Mashed Potatoes. Boil potatoes until tender, peel, and mash. In a pan, heat butter, stir in mashed potatoes, and gradually add milk to achieve a creamy consistency. Season with salt and pepper. Set aside.

Step 3: Sauté Vegetables. Heat butter in a pan, add garlic and sauté until fragrant. Add broccoli, carrots, and peas; cook until tender-crisp. Season with salt and pepper. Set aside.

Step 4: Prepare French Fries. Rinse potato sticks in cold water, pat dry, and deep fry in hot oil until golden and crispy. Drain on paper towels and season with salt.

Step 5: Prepare Brown Sauce. Melt butter in a saucepan, add flour, and stir continuously to create a roux. Gradually whisk in vegetable stock to prevent lumps. Add soy sauce, ketchup, Worcestershire sauce (if using), salt, and pepper. Simmer until thickened.

Step 6: Cook Paneer Steak. Heat oil in a flat pan and sear marinated paneer slices over medium heat until golden and slightly crisp on both sides. Keep warm.

Step 7: Assemble the Sizzler. Heat a sizzler plate or skillet thoroughly. Place a cabbage leaf on the plate to prevent sticking. Arrange mashed potatoes, sautéed vegetables, French fries, and paneer steak on the plate. Generously pour brown sauce over the paneer and vegetables.

Step 8: Serve. Place the sizzling plate on a wooden base and serve immediately with extra brown sauce.
