Paneer Steak Sizzler with Mashed Potatoes, Sautéed Vegetables, French Fries, and Brown Sauce.
Ingredients:
For Paneer Steak:
Two large (1-inch thick) paneer slices; 1 teaspoon red chili powder; ¼ teaspoon turmeric powder; ½ teaspoon garam masala; 1 teaspoon lemon juice; 1 teaspoon ginger-garlic paste; salt to taste; 2 tablespoons oil.
For Mashed Potatoes:
Two large potatoes; 2 tablespoons butter; ¼ cup milk; salt to taste; ½ teaspoon black pepper powder.
For Sautéed Vegetables:
1 cup broccoli florets; ½ cup julienned carrots; ½ cup green peas; 1 teaspoon finely chopped garlic; 1 tablespoon butter; salt and pepper to taste.
For French Fries:
Two large potatoes, cut into sticks; oil for deep frying; salt to taste.
For Brown Sauce:
2 tablespoons butter; 2 tablespoons all-purpose flour; 1 cup vegetable stock or water; 1 teaspoon soy sauce; 1 tablespoon tomato ketchup; 1 teaspoon Worcestershire sauce (optional); ½ teaspoon black pepper powder; salt to taste.
Preparation:
Step 1: Marinate the Paneer. Combine red chili powder, turmeric powder, garam masala, lemon juice, ginger-garlic paste, and salt with a small amount of water to create a paste. Evenly coat the paneer slices with this marinade and allow to rest for 20 minutes.
Step 2: Prepare Mashed Potatoes. Boil potatoes until tender, peel, and mash. In a pan, heat butter, stir in mashed potatoes, and gradually add milk to achieve a creamy consistency. Season with salt and pepper. Set aside.
Step 3: Sauté Vegetables. Heat butter in a pan, add garlic and sauté until fragrant. Add broccoli, carrots, and peas; cook until tender-crisp. Season with salt and pepper. Set aside.
Step 4: Prepare French Fries. Rinse potato sticks in cold water, pat dry, and deep fry in hot oil until golden and crispy. Drain on paper towels and season with salt.
Step 5: Prepare Brown Sauce. Melt butter in a saucepan, add flour, and stir continuously to create a roux. Gradually whisk in vegetable stock to prevent lumps. Add soy sauce, ketchup, Worcestershire sauce (if using), salt, and pepper. Simmer until thickened.
Step 6: Cook Paneer Steak. Heat oil in a flat pan and sear marinated paneer slices over medium heat until golden and slightly crisp on both sides. Keep warm.
Step 7: Assemble the Sizzler. Heat a sizzler plate or skillet thoroughly. Place a cabbage leaf on the plate to prevent sticking. Arrange mashed potatoes, sautéed vegetables, French fries, and paneer steak on the plate. Generously pour brown sauce over the paneer and vegetables.
Step 8: Serve. Place the sizzling plate on a wooden base and serve immediately with extra brown sauce.
