Salmon Thai Red Curry❤️ Recipe below😍 Creamy, spicy, full of flavour and so easy to make 🤌🏽 One of those dinners that tastes even better than it looks ✨ Save this one for later!

Ingredients
* 500–600g salmon, cut into chunks
* 4 mixed peppers, chopped
* 2 red onions, chopped
* 4 garlic cloves, minced
* 1 tsp ginger paste
* 2 tbsp Thai red curry paste
* 1 can coconut milk
* 2 cups water
* 1–2 tbsp sriracha
* 2 tsp soy sauce
* Fresh chillies, to taste
* ¼ tsp honey
* Juice of 1 lime
* Fresh coriander
* Rice, to serve
* Optional garnish: spring onions and sesame seeds

Method

1. Heat a little oil in a pan, then add the red onions, garlic and ginger paste. Cook until softened and fragrant.
2. Add the Thai red curry paste and mix everything together well for 1–2 minutes.
3. Pour in the coconut milk and mix until smooth, then add the water and stir again.
4. Add the chopped peppers and allow them to cook gently in the curry.
5. Stir in the sriracha, honey, soy sauce, fresh chillies and lime juice. Leave the curry to gently simmer so all the flavours come together.
6. In a separate pan, cook the salmon chunks until nicely coloured on the outside and almost cooked through.
7. Add the salmon to the curry and let everything cook together for a few minutes, allowing the salmon to soak up the sauce.
8. Stir through fresh coriander just before plating.
9. Serve with rice and garnish with extra coriander, spring onions or sesame seeds if you like.

Hope you guys are having a wonderful week✨
