Golden brown, perfectly crispy, and packed with melty goodness.Crispy and Cheesey Beef Taquitos.🧀🌮
📝Ingredients list:
For the Beef Filling:
Ground beef: 1 lb (450g)
Onion: 1 small, finely diced
Tomato paste: 1 tbsp
Water or beef broth: ¼ cup
Seasoning mix: 1 tsp chili powder, 1 tsp paprika, ½ tsp cumin, ½ tsp garlic powder, ½ tsp onion powder, salt and black pepper to taste.
For the Avocado Sauce:
Avocado: 1 ripe
Fresh cilantro: A small handful
Garlic: 2 cloves
Olive oil: 1 tbsp
Lemon juice: From ½ a lemon
Water: 2–3 tbsp (just enough to blend smoothly)
Salt and pepper: A pinch of each
To Assemble:
Tortillas: 6–8 medium flour or corn tortillas
Shredded Mozzarella (or Monterey Jack): 1 ½ cups
Method
1. Cook the Beef
Saute the diced onion in a pan with a little oil until soft. Add the ground beef, breaking it up as it browns. Drain excess fat if needed. Stir in the seasoning mix, tomato paste, and water. Simmer on low heat for 5 minutes until the sauce thickens and coats the meat. Set aside.
2. Blend the Sauce
In a food processor or blender, combine the avocado scoop, cilantro, garlic, olive oil, lemon juice, salt, pepper, and water. Blend until completely smooth and creamy.
3. Roll the Taquitos
Lay a tortilla flat. Place a generous sprinkle of cheese down the center, top with a few spoonfuls of the beef mixture, and add a little more cheese on top. Roll the tortilla tightly around the filling.
4. Pan-Fry Until Crispy
Heat a thin layer of oil in a skillet over medium heat. Place the taquitos seam-side down in the pan so they seal shut. Fry for 2–3 minutes per side, turning carefully, until all sides are golden brown and incredibly crispy.
Serve hot immediately while the cheese is perfectly melty, and dive straight into that avocado dip!
