We are officially galloping into the Year of the Horse this week 🐎✨ And honestly, I love the energy of this one. Horses symbolise confidence, movement, and going after what you want. It feels like such a good tone to set for the year ahead.

To celebrate, I have pulled together 12 of the luckiest Chinese New Year foods to make with children. Crispy spring rolls for wealth, tang yuan for family togetherness, and long life noodles for health and happiness! 💫

The secret to a peaceful morning? These 7 minute sweet potato or pumpkin Pancakes 🥞 have you tried them?

Gluten free, veggie packed, and actually delicious. I’ve been making these on repeat because they keep the kids full and happy thanks to all that fiber and iron.

🥞 Ingredients:

1 cup oats + 1 cup GF flour
1/2 cup raw sweet potato or pumpkin (chopped)
2 eggs
2/3 cup milk
1 tbsp baking powder + 1 tsp cinnamon + raisins
Pinch of nutmeg & ginger (optional)

The Method:
1) Blitz everything in the blender
2) Cook on a greased pan until bubbly then flip!

Pro tip: if you have time, let them rest for about 10 minutes to make them extra fluffy!

Serve with your favorite toppings and watch them disappear! 🍯

It’s Shrove Tuesday next week! Are you TEAM SWEET or TEAM SAVOURY? 🥞 is so simple you can make both 🥰

Ingredients for the perfect pancake:

1 ½ cups All-purpose flour
3 ½ tsp Baking powder
1 tsp Salt
1 tbsp White sugar
1 ¼ cups Milk
1 Large egg
3 tbsp Butter, melted and slightly cooled
1 tsp Vanilla extract (optional, but highly recommended)

The Method:

In a large bowl, sift together the flour, baking powder, salt, and sugar. Sifting is key for a light, airy pancake.

In a separate bowl or measuring cup, whisk the egg, milk, melted butter, and vanilla until well combined.

Pour the wet ingredients into the dry. Use a whisk or spatula to mix until just combined.

Top tip!! Do not over-mix! If the batter is perfectly smooth, your pancakes will be tough. A few small lumps are perfectly fine.

Most Cuisinart plates are non-stick. Adding oil or cooking spray can actually cause a “gummy” buildup over time. The butter in the batter should be enough.

Let the batter sit for 5 minutes before cooking. This allows the flour to hydrate and the baking powder to activate, resulting in a fluffier texture 🥞🥰

AD | This weather is calling for a warming, healthy, super quick crowd pleaser! Using the brand new UMF 10+ MGO 263 you can make this golden chicken, with crisp potatoes and garden veg in under 10 minutes of prep! 😍

✨What you’ll need

1 tablespoon
1 tablespoon wholegrain mustard
3 garlic cloves, crushed
Zest and juice of 1 unwaxed lemon
3-4 chicken thighs, skin on
300g new potatoes, unpeeled
1 tablespoon olive oil
Handful of spinach
100g frozen peas

✨Let’s cook!

1. Heat the oven to 200C or 180C fan or gas 6. Mix the mustard, garlic, lemon and olive oil, leaving the honey to the very end.

2. Arrange the chicken skin side up on a large tray. Nestle the potatoes between them and drizzle with 3/4 of the sauce, keeping a little behind for the final coat. Roast for about 35 minutes until the chicken is golden and caramelised.

3. Add the spinach and peas and return to the oven for a few minutes until they soften into the juices.

4. Squeeze the Manuka honey into the left over sauce and mix

5. Just before serving, spoon the honey mix sauce over the chicken and veg. It lifts every flavour and keeps all the goodness of the raw honey intact!

Perfect for fast family suppers that feel special, you’ll love it!
