What if the fire wasn't hidden at the back, but sat dead centre of the room?

Most brasserie kitchens hide behind a wall. The fire's a service function: smoke, noise, mess kept out of sight, out of the guests' way. At Brasserie Vinatier, that wall doesn't exist; the open fire and its gantry sit dead centre, visible from the marble bar all the way through to the dining tables.

Here, the kitchen becomes the main event and everything else - the timber, the brass, the wine displays lit like a chateau cellar - circles it.

From the outside, Brasserie des Prés reads exactly how you'd expect: sunny terrace, Left Bank charm, the kind of façade that says ""classic Parisian brasserie"" before you've even reached the door.

When you walk further in, that first impression quickly changes, a welcomed surprise.

Ground floor: bustle, open kitchen, mosaic tile underfoot, brass lamps warming up as the evening comes in.

First floor: the energy drops and turns theatrical, think ruched curtains, antique mirrors, and baroque lighting doing the work of a stage set.

Keep climbing and you'll find a boutique lounge with a vinyl record library, until you step through a set of velvet drapes and land somewhere else entirely: Grouvie, a hidden 70s bar, mirror ceiling, disco balls, an atmosphere the façade never once hinted at.

There's a wave pattern running around the inside edge of the Juan emblem. It's a Japanese reference, quiet enough that you might not catch it the first time, but it's there.

That detail is a good summary of how the whole brand works. Juan is a Latin-Asian fusion restaurant in Dubai, built on a cuisine with real history behind it - Asian immigrants who settled in Latin America and, over generations, created something genuinely new. The brand needed to carry that without spelling it out.

Three incredible projects have picked up Honourable Mentions at the DNA Paris Design Awards.

Brasserie Vinatier: a room built around wine as architecture, with tiered shelving, warm oak and a live wood-fire kitchen at its centre.

Brasserie Barbotin: Marseille's nautical energy in Fauvist colour. This former merchant warehouse was transformed with a sun-soaked terrace, pastel awnings and Drucker chairs against exposed timber and stone.

Monte Mente: a modern Mediterranean concept named for the spirit of the mountains, its branding built to move from wall to menu to digital.
