The viral crispy rice salad!

Best way to utilise that left over rice in the fridge 🍚🍚

Before we get started, take your rice and put it on a baking tray. Add chilli oil, sesame oil and a bit of soy sauce and put it to bake for about 20 to 25 minutes on 210°C.

For the marinade:

2-3 tbsp tahini (you can also use peanut butter if you like)
1.5 tbsp lemon juice
1 tbsp soy sauce
1 clove Minced garlic
1/2 tbsp maple syrup or honey
You can also add sriracha for that extra peppery flavour if you like.

Mix it well and bring it to the right consistency.

Now in your salads bowl add edamame, spring onions, parsley leaves, mint leaves, avocado and your choice of protein. I’ve used grilled salmon.

Mix it well with the dressing and add the crispy rice on top. Garnish with sesame seeds and enjoy it on a hot summers day!

Sweet Potato Fries- great carb to add to your meal. It’s healthy and oh so yum! 😍

This recipe is for 5-6 sweet potatoes cut into wedges

For the marination:

1/2 cup olive oil
1 tbsp garlic powder (maybe a little more if you like garlic)
1 tbsp mixed herbs
1 tsp paprika

Whisk it and add your sweet potato and keep it marinated for about an hour.

For the sauce:

2 tbsp Greek yogurt
1 tsp salt
1 tsp mustard powder
1 tbsp sriracha
A few capers chopped
1 tsp caper juice
Parsley chopped

Airfry the marinated potatoes for about 12-15 mins till crisp. You can also oven roast it on 200 degrees Celsius for about 20-25 minutes.

Enjoy it with the dip! X
