Savory French Garlic Soup
INGREDIENTS:
French Garlic Soup
- 64 ounces chicken stock
- Small bunch fresh sage
- 1 large head of garlic
- 2/3 cup olive oil (or other vegetable oil)
- 1 large egg, separated
- 1 tsp Dijon mustard
- Pinch of salt
INSTRUCTIONS:
1. In a large Dutch oven or stock pot, heat the chicken stock along with the fresh sage. Bring the mixture to a gentle simmer and let it simmer while you prepare the garlic.
2. Peel the skins from the garlic cloves and cut them in half lengthwise, discarding the green shoots. Boil the halved garlic cloves in a small saucepan with water for 3-4 minutes, then drain them.
3. Use a fork to mash the softened garlic until smooth and incorporate it into the simmering stock. Allow the soup to continue simmering for an additional 10 minutes.
4. To make the mayonnaise, in a small jar, combine the egg yolk, Dijon mustard, salt, and olive oil. Blend the mixture with an immersion blender until it is emulsified. If the mayonnaise does not thicken, add the reserved egg white and blend again until you achieve the desired consistency.
5. If you prefer a smoother soup, strain the mixture and return it to the pot.
6. Take a ladleful of the hot soup and mix it into the mayonnaise to temper it, then carefully stir the mayonnaise back into the soup pot.
7. Heat the soup on the stove gently without allowing it to boil.
8. Serve the soup hot, garnished with crusty croutons, a drizzle of olive oil, a sprinkle of smoked paprika, and fresh parsley, if desired.
