Papaitan is a traditional Filipino soup made with slow-cooked beef or goat offal โ€” things like tripe, liver and other cuts. Itโ€™s similar to tripe soup or other traditional nose-to-tail dishes. What makes it unique is its slightly bitter taste, which comes from natural bile.

Papaitan comes from Northern Luzon in the Philippines, especially the Ilocos region.
The name โ€œpapaitanโ€ comes from the Filipino word โ€œpait,โ€ which means bitter.

It was traditionally made by farmers and rural communities.
Nothing was wasted โ€” when an animal was slaughtered, every part was used.
The bile was added to give flavour and character to the soup.
Itโ€™s part of a long tradition of practical, resourceful cooking โ€” similar to how many European cultures developed dishes using offal (like haggis in Scotland or tripe dishes in parts of England and Europe).

Itโ€™s very warming and comforting, especially in this cold UK weather.

Lumpiang Sariwa (Fresh Lumpia)

A beloved Filipino fresh spring roll filled with tender vegetables, tofu and savory meat, wrapped in a soft crepe-like wrapper and topped with a rich garlic-peanut sauce. Light, flavorful, and so comfortingโ€”perfect without frying โœจ

Ingredients (filling):
โ€ข Bean Sprouts
โ€ข Pork (or shrimp)
โ€ข Garlic & onion
โ€ข Carrots, julienned
โ€ข Green beans or cabbage
โ€ข Soy sauce or oyster sauce
โ€ข Salt & pepper

Wrapper:
โ€ข Eggs
โ€ข Flour
โ€ข Water
โ€ข Oil

Peanut sauce:
โ€ข Ground peanuts or peanut butter
โ€ข Garlic
โ€ข Brown sugar
โ€ข Soy sauce
โ€ข Cornstarch (for thickening)
โ€ข Water

How to cook:
Sautรฉe garlic and onions, add the pork, then mix in vegetables and season until tender. For the wrapper, make a thin egg batter and cook it like a soft crepe. Wrap the filling in lettuce and the crepe, then generously top with homemade garlic-peanut sauce.
